Cheddar Mushroom Potato Casserole
4 medium potatoes, cut into 1/4-inch slices
1 cup (4 ounces) shredded cheddar cheese
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 teaspoon paprika
1/4 teaspoon pepper
Arrange potatoes in a greased shallow 2-qt!. baking dish; sprinkle with cheese!. In a bowl, combine soup, paprika and pepper; spread over cheese!. Cover and bake at 400° for 45 minutes!. Uncover; bake 10 minutes longer or until potatoes are tender!.
Creamy Vegetable Casserole
1 package (16 ounces) frozen broccoli, carrots and cauliflower
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 carton (8 ounces) spreadable garden vegetable cream cheese
1/2 to 1 cup seasoned croutons
Prepare vegetables according to package directions; drain and place in a large bowl!. Stir in soup and cream cheese!. Transfer to a greased 1-qt!. baking dish!. Sprinkle with croutons!. Bake, uncovered, at 375° for 25 minutes or until bubbly!.
Mushroom Green Bean Casserole
1 pound fresh mushrooms, sliced
1 large onion, chopped
1/2 cup butter
1/4 cup all-purpose flour
1 cup half-and-half cream
1 jar (16 ounces) process cheese spread
2 teaspoons soy sauce
1/2 teaspoon pepper
1/8 teaspoon hot pepper sauce
2 packages (16 ounces each) frozen French-style green beans, thawed and well drained
2 to 3 tablespoons slivered almonds
In a large skillet, saute mushrooms and onion in butter!. Stir in flour until blended!. Gradually stir in cream!. Bring to a boil; cook and stir for 2 minutes or until thickened!. Reduce heat; add the cheese sauce, soy sauce, pepper and hot pepper sauce, stirring until cheese is melted!. Remove from the heat!. Place beans in an ungreased 3-qt!. baking dish!. Pour the cheese mixture over top!. Sprinkle with almonds!. Bake, uncovered, at 375° for 25-30 minutes or until bubbly!.

Step2Sprinkle the top with onion chips or potato sticks and put in the oven at 350 degrees for 20 - 30 minutes!.

3-4 large boneless/skinless chicken breasts
1 can cream of chicken soup or cream of broccoli
1 8 oz container sour cream
1 bottle of poppy seed
1 stick Ritz crackers
1/2 stick butter
1/4 tsp salt
1/4 tsp pepper
1!. Chop chicken into 1 inch squares and cook until done!.
2!. In a bowl, combine cream of chicken soup, sour cream, chopped chicken, salt, and pepper!.
3!. Smooth out into casserole dish!.
4!. Crumble Ritz crackers on top!.
5!. Melt butter and drizzle on top of crackers!.
6!. Sprinkle top with poppy seeds!.

Creamy Tuna Casserole (I might even try this with chicken)
*sorry only AU metric measures
420gm can cream of asparagus soup
425gm can of tuna in springwater
2 cups cooked rice
1/2 cup grated tasty cheese
1/2 cup evaporated milk
1 brown onion finely chopped or grated
1 tsp finely grated lemon rin d
2 tblspns lemon juice
salt n pepper
(I addded crushed garlic and crushed ginger - 2tspn each)
chopped parsley to garnish after cooking
extra wedges of lemon to garnish
Mix all in a bowl (can't get simpler)
Topping
60gm butter melted, mixed with
1 cup crushed weatbix
grease a 10 cup ovenproof dish
add tuna filling
top with the combined butter and weatbix (or use Sher's Ritz cracker mix - just as good)
Cook in moderate oven (180 degrees C) fro 30mins
Serve with garnishes
(my hubby felt it need something extra and added Thousand Island dressing to his - that really added a kick to it) I might add tabasco to my serve next time!.Www@FoodAQ@Com

Tin of Chickpeas
200 g tin chopped tomatoes
300 ml (1/2 pint) Veg stock
50 g (2 oz) dried apricots and/or sultanas
25 g (1 oz) flaked almonds (optional)
Preheat oven to 180
Heat the oil and fry the onion for 3-4 minutes, until softened!. Add the lamb and cook for 4-5 minutes!.
Add spices and season
Add stock and rest of ingredients
Braise for 2 hours add extra stock if necessary

Take two large can of Spam lay the meat end to end!. take your brush and cover the spam well, with the mustard of your choice, Chop one small onion real fine and cover the mustard with the onion then have ready a pot of creamy whipped potatoes, and cover the meat and fill in around the meat, until pan is full !.bake 30 miutes on 350 degrees!. and I always serve mine, with sweet pea salad and sliced tomato!. and it make a very nice and quick dinner!.
