My brother went thru a similar case and he also had no real appetite and this is a 21 yr old man (23 now)!. Here is a very simple recipe!. He can do smaller amounts for just him or larger amounts if he is family or friends coming over!. It has been almost 2 yrs and he is starting to get better, so keep your friends spirits up!.
Crock Pot Chicken Salsa Curry
10 chicken thighs-bone in
1 jar of your fav salsa
1/2 onion chopped
1 tablespoon curry (or about 1/2 if you don't like a strong curry taste)
1/2 cup sour cream
Place the chicken in the crock pot!. Mix the onion, curry and salsa!. Pour over the chicken and cook on low for about 6-8 hours!.
When the chicken is done take it out of the crock pot and put on a serving plate!. Add the sour cream and mix well!. Spoon the sauce over the chicken!.
This would go well with rice or cous cous!.
Doing half of this would be good them he can have it as left overs the next day!. Fold it up with some colslaw or shredded lettuce and a little more salasa and sour cream and chopped tomatoes and there is a nice cool lunch!.
I used to make a cheaters cream of potato soup!. Add some chopped onion, canned corn, baby carrots cut in 1/2 and some chopped celery!. Pour in a can of cream of potato soup or what ever sounds good or is on hand give it a quick stir cover and cook on med for at least 3-4 hours!.
And even though this os not even close to chicken this is very good!. It also make a lot but is also good as left overs, can be frozen and would be another one yummy to share with company!. He could impress people with his "cooking" skills with this!. I do know it sounds a little wierd but it is really good I swear!.

In the crock pot, just drop in a whole chicken - clean it first - and set the crock on high!. Wait about 4-5 hours, then eat!.
Option 1 - Add half a bottle of white grape juice OR white wine!.
My favorite, however, involves a GE Advantium oven!. Place a whole chicken in a pan, rub it all over with cooking oil, then sprinkle lightly with poultry seasoning!. Cook on high (light & microwave) for about 35 minutes!. Comes out crispy and juicy! Can also be done in a standard oven at 550 degrees until chicken is done by temperature!. Cooks fast, seals in the juice, and is amazingly juicy and tender!. Makes a very crispy skin BUT can put out a lot of smoke - pull the battery out of the smoke detector, open the window, start the fan, and warn the neighbors so they don't call 9-1-1!.
NOT A CHICKEN RECIPE BUT:
Take a CHEAP cut of roast (whatever is on sale, fatty is best); add carrots, potatoes (quartered with skins on), an onion, set on low just as you leave for work!. Dinner will be ready when you get home!. Usually provides leftovers for a few days! And no - DON'T add any liquid, the roast will take care of that by itself!.
When cooking with a crock pot, always wait until the meal is cooked BEFORE you add salt - then salt to your personal preference!. I prefer none!.Www@FoodAQ@Com
