Start with fresh ground chuck!. Chuck is the most flavorful type of ground beef, and comes from a single cut of beef!. Plain "ground beef" can include meat from all over the animal!.

Make sure the chuck has a fat content of at least 15 to 22 percent to ensure juiciness!. If you prefer your burgers well done, ask your butcher for a higher fat content!. This will allow you to cook them more without drying them out!.

Chill the beef well before forming patties!. Wash your hands well, then form the patties!.
Step4
Make each patty by forming about half a pound of ground chuck into a tight ball about the size of a baseball!. Firmly press ball into a flat cake, first between your hands, then onto a clean cutting board!.

Use a spatula or other straight-edged tool to "pull in" the sides of the patty so that they remain together and tight!.
Step6
Form patties about 1/2- to 3/4-inch thick!. Make the diameter about 1/2 inch larger than the bun to allow for shrinkage!.

Build a hot fire in the grill!. Lightly oil the bars with vegetable oil - pour oil onto a paper towel, then hold the towel with tongs to wipe the oil onto the grill bars!.

Season the burgers on both sides with salt and pepper!. Kosher salt and freshly ground black pepper give the best flavor!.
Step9
Place the burgers on the grill over direct heat!. Cook about 3 to 4 minutes per side, turning once!. Do not press down on the burgers with the spatula during cooking - this only squeezes out the juices, encourages flame-ups and dries out the burger!.

Check doneness by peeking inside a patty with a spatula, or use an instant-read food thermometer inserted into the center of the patty!. (See Tips for recommended temperature!.)

Serve on fresh buns with any toppings you prefer: cheese, tomatoes, lettuce, onion, pickles and condiments such as ketchup, mayonnaise or mustard!.Www@FoodAQ@Com

2 pounds ground chuck
Salt and freshly ground black pepper
1/2 cup best-quality mayonnaise
3 cloves roasted garlic, pureed
1/4 cup Dijon mustard
4 soft, classic hamburger buns
8 slices thinly sliced Swiss cheese
4 slices thinly sliced smoked ham
2 dill pickles, sliced 1/4-inch thick

Preheat the grill to high!. Form the meat into 4 (1/4-inch thick) burgers!. Season the meat with salt and pepper on both sides!. Grill for 2 to 3 minutes on both sides for medium doneness!. When the burgers are done, remove from the heat and reduce heat to medium-low!.

Meanwhile, combine the mayonnaise and roasted garlic in a small bowl and season with salt and pepper, to taste!. Spread both sides of each bun with mayonnaise and mustard!. Place a slice of cheese on the bottom portion of each bun, place the burger on top of the cheese, then top the cheese with a slice of ham and another slice of cheese, and finally, the pickle slices!. Place the tops of the bun over the pickles, wrap the burgers in aluminum foil, and place them on the grill!. Using a heavy pan or a brick wrapped in foil, press down on the burgers for about 30 seconds to 1 minute!. Lower the lid on the grill and continue grilling for 1 to 2 minutes, or until the cheese has melted and the bun has become pressed and firm!.Www@FoodAQ@Com

to the ground chuck beef, add worchestershire, onion, salt, pepper, if you like add hot sauce!. mix the ingredients together but don't over mix (will make the burger tough)
Make sure you spray PAM on the grill, the heat it up or if charcoal wait until you see some gray ash!. Using one pound of meat will make 4 nice size burgers!. Multiply the meat for more burgers (2pounds=8 burgers)!. Place on the grill, and watch carefully not to burn!. Cook to your doneness!Www@FoodAQ@Com

fresh ground beef, even though lean is good for you a really tasty burger needs fat, make into a patty but don't pack it really tight, put it on the grill and don't fiddle with it till one side is done, depending on how you enjoy it, then flip!.!.!.!.!.!.!.my family likes to use lean beef, a thick slice of onion, lay it in foil, top with a small dot of butter, seal the foil and cook it right in the coals, they are so awesome and probably have less fat then a fatter cut of ground beef!.!.!.!.!.!.!.!.!.!.!.!.enjoyWww@FoodAQ@Com
