I don't have an exact recipe, but I can tell you what I do!.

I cook up my red potatos with skins on whole and cool down in frig overnight!. They cut up nicer this way!.

Next day I fry up my bacon and crumble it up!. I pour the hot bacon grease and crumbled bacon into the diced potatoes!. Then I add finely chopped celery, finely chopped red onion,a few boiled eggs chopped up, marinated artichoke hearts chopped up, black olives, mayo, mustard, celery seed, salt and pepper to taste!. The I top it with paprika!.

This was my Grandma's recipe from many many years back and was always a huge hit!. Of course it always turns out a little different from each person that makes it, but that is only because my Grandma would put her love into it!.

Some subtitutions- instead of artichokes can do dill pickles chopped up- instead of black olives can do green, if wanted to make it with a bit of a kick you can do diced mild green chilis, you can used dried onions instead of fresh, you can use celery seed instead of fresh celery, and you can use sourcream instead of mayo or dijon mustard instead of regular mustard!.

It is fun to try different things to see if you hit on a taste that you really enjoy!. This is the fun part of making salads is to experiment because it is not an exact science!.Www@FoodAQ@Com

This first recipe is not exact but here is how I do my creamy potato salad:

About 3-4 potatoes
2-3 hard boiled eggs (I really like the eggs so some times I add even more)
1-2 pickles depending on how well you like pickles(I don;t like pickles but the flavor is imprtant so sometimes I may only add 1/2 pickle)
1/2 onion or more-also depending on taste
1 good sized stalk celery chopped
Mayonaise
Yellow Mustard
splash of pickle juice
Good sprinkle of seasoned salt
Dreid dill weed

Boil the potatoes whole with the peel on until tender!. Drain and rinse with cool water!. When they are cool enough to handle peel off the skins and dice into bite sized chunks)

Meanwhile mix up the mayo, mustard, seasoned salt, pickle juice and dill to taste!. Add eggs, pickles, onion, celery to the potatoes and top with the mayo mix!. Do this while the potatoe are still a little warm, this helps them absorb more flavor!. Mix well and let cool to room temp!. Wrap with seran wrap and refridgerate 3-4 hours!.

Zesty Potato Salad:

1 1/2 pds red potatoes
1/2 cup itallian dressing
1/4 spicy brown mustard
1 cup sliced celery
1/4 cup minced parsley
2 tbsp minced green onion
1/2 orange bell pepper chopped up kinda small *optional

1/4 the potatoes and boil until fork tender!. Drain!.

In the meantime mix the itallian dressing, mustard, and parsley!.

After the poatatoes are drained and cooled mix the celery green onion, and peppers if desired with the potatoes and toss with the dressing mustard mix!. Cover and refridgerate 3-4 hrs!. Delicious!.Www@FoodAQ@Com

award winning potato salad,we cater this salad!.

2 1/2 pounds of red potato's
8 eggs
1/2 chopped onion (yellow)

2 cups Miracle Whip
1/2 cup cold water
1 full Tbsp!. yellow mustard
1 tsp!.salt
1/4 cup sugar to sweeten the mustard, I always use Nutra Sweet packets,about 2,then taste for bitterness,you can add more sweetener!.
1 full tsp,pepper,a must,this is the trick for GREAT potato salad!!!!!!

cook potato's,cool completely,then peel
cook eggs (boil for 3 minutes,turn off burner,cover for 10 minutes,drain off the hot water,run cold water over eggs,peel

when potato's and eggs are cooled,cut into smaller pieces'
Mix ingredients for dressing and pour over the potato's!.onion and eggs,mix,put in the fridge until cold,then enjoy !!!
