My scratch cakes are dry within a day of baking them. What can I do to keep this from happening?!

anytime you put baked products in the fridge or freezer you actually begin to dehydrate them!.!.!.an airtight container is best, out at room temp!.!.!.also you may try coating them with an apricot glaze!.!.!.doesn't impart much flavor and may seal the surface a bit for you!.!.!.good luckWww@FoodAQ@Com
Scratch cakes are dryer than commercial mixes or bakery cakes!.
We are so used to the commercial products that we forget that!.
I use scratch cakes when I know they will be eaten that day, like for birthdays and holidays!.
Other than than I use a mix with additions to make it taste better, one of the good cookbooks for that is The Cake Doctor series, then you get a flavorful cake that is moist and lasts!.
You could also try different recipes, the ones with sour cream stay well!.Www@FoodAQ@Com

Tupperware used to have a "cake keeper", it was a flat bottom with a big dome that snaps down and a handle over the dome!. I'd check in the housewares dept!. at WalMart or a discount store for something similar!.
also, you might want to try adding some apple sauce or sourcream or pureed carrots to the cake!. None of them change the taste enuf to notice and they keep the cake moist!.
