It should be: risotto is mainly a typical Northern Italian technique to cook rice (basically it means to prepare a side , light broth, toast rice and onions in hot oil or butter, washing with wine and then , after wine evaporation, adding broth in small quantities up to complete cooking)!. Probably any risotto, by definition means a rice cooked in the Italian way, and I have always found risotto ai funghi (mushroom risotto) as traditional local dish in Italy!.Www@FoodAQ@Com

Most risottos are of Italian origin!. They have the beautiful ARBORIO rice which is rich and creamy!. Add any veg you like but the most famous and gorgeous is: SEAFOOD RISOTTO!. TRY !!!!!!!!!!!!Www@FoodAQ@Com
