I have some catfish in the freezer that I want to use for supper tonight!. What are your favorite ways to cook catfish!?

Catfish Cakes
INGREDIENTS:
1 pound catfish fillets
1 medium onion, chopped
1 teaspoon prepared yellow
mustard
1 tablespoon creamy salad
dressing (e!.g!. Miracle Whip) 1/2 teaspoon Old Bay
Seasoning TM, or to taste
2 1/2 cups coarsely crushed
buttery round crackers
1 egg
1 cup vegetable oil (for frying)
DIRECTIONS:
1!. Place catfish in a saucepan with enough water to cover!. Bring to a boil, and cook until fish flakes easily with a fork!. Drain off water, and mash up the fish!. Stir in the onion, mustard, salad dressing, Old Bay?, cracker crumbs and egg!. Mix until evenly blended!.
2!. Heat oil in a large heavy skillet over medium-high heat!. Form the fish mixture into patties, and fry in the hot oil!. Drain on paper towels, and serve hot!.
Lemon Pepper Catfish
INGREDIENTS:
1 1/2 cups all-purpose flour
1/2 cup cornmeal
1 tablespoon lemon pepper 4 eggs
6 (6 ounce) fillets catfish
1/4 cup margarine
DIRECTIONS:
1!. Combine flour, cornmeal and lemon pepper spice; set aside!. In a separate bowl, lightly beat eggs!.
2!. In a large frying pan, melt margarine over medium-high heat!.
3!. Working one at a time, dip filets in egg and dredge in flour until well coated!. Cook in hot margarine, turning once, until brown on both sides!. Drain briefly on paper towels and serve!.

1 egg
1 tablespoon milk
3/4 cup grated Parmesan
cheese
1 1/4 cups all-purpose flour
1 1/2 teaspoons salt 1 1/2 teaspoons ground black
pepper
1 teaspoon paprika
8 (4 ounce) fillets catfish
1/4 cup margarine, melted
DIRECTIONS:
1!. Preheat oven to 350 degrees F (175 degrees C)!.
2!. Beat the egg together with the milk in a medium bowl!. In another bowl, stir together the cheese, flour, salt, pepper and paprika!.
3!. Dip catfish in the egg and milk mixture, then dredge in the cheese mixture until coated!. Arrange fish in a single layer in the bottom of a 9x13 inch baking dish!. Pour melted butter over the fish!.
