Question: Can anyone suggest some good dinner ideas for tonight, something light!?
It is hot and humid here and I want something light and crisp!. It is just a family dinner!. My hubby and kids!. I am out of ideas, any suggestions!?Www@FoodAQ@Com

SJ-SC-CA Incredible Chicken Salad

3 cups chicken breast (cooked and cubed)
1 cup pineapple (diced)
1/2 cup celery (diced)
1/2 cup mayonnaise
1/4 cup raisins
1/4 cup walnuts
1/8 cup dried cranberries
2 Tablespoons sweet onion (minced)
2 Tablespoons apple juice

Combine all ingredients in a bowl until well combined and chill!. Serve with a lettuce garnish!.

Or you could do a Caesar salad!.

How about a white bean salad!? That's my favorite!. It's just drained white beans with fresh squeezed lime juice, chopped cilantro, chopped red onion, a little olive oil & some white pepper!.

You could serve that with a grilled fish!. I almost always want fish & rice with a salad when it's hot!. Maybe Tilapia, Orange Roughy, or Halibut!. Nice & flaky fishes!.

A simple steak always works with a light angel hair pasta with garlic & some herbs!. The Pasta Roni boxes are great!.

How about a Taco Salad!. That's easy!. Just brown the meat with some seasonings & cut up some lettuce, tomato, cheese, black olives, green onions!. YUM!Www@FoodAQ@Com
