Only one hidden reason!. Cost as its relatively cheaper than the tastier and larger King, Endeavour or Banana prawns and availability!.
Tiger prawns are cultivated in brackish water ponds while the others require much more unpolluted and deeper seas!.

I have been to many weddings in my life and I can say categorically that prawns (tiger or otherwise) have NEVER been on the menu (the last time was because the bride had a shellfish allergy!.)

My guess would be that it is the most available type of prawn with over 900,000 tons being harvested annually!. They take well to garlicky and dry white wine sauces, have a short prep time and are something that may seem rather special compared to chicken breasts or a beef roast for a wedding dinner!. I'm sure the caterers are able to make more per plate, too, since it qualifies as seafood and sounds 'nicer'!.Www@FoodAQ@Com
I agree with O and his answer but would like to add that tiger prawns are often farmed, and therefore more economical and a cleaner prawn, they are probably more available, I prefer them to imported into Australia, it is such a shame that we have to export our best seafood and we Australians are left with the inferior quality seafood

Meat & Seafood are food that cannot be miss at the table!. You can see fish & prawns but not crab for easy consuming!. The colour of prawns, its taste & popularity are among the reasons!. Not forgetting the supply is also available & affordable to us!.Www@FoodAQ@Com
