Hi everyone,I'm off to my freshman year in college this year and have NO idea how I will survive with lack of food!.Lol!.I don't want to eat cafeteria food all year long,gross!.So,anyway,in my dorm room I'm only allowed to use what comes with being in the dorm room!.!.!.which is a Micro-Fridge System!.It is a fridge,microwave,and freezer in one!.Besides that,I can't use anything else,a mini grill,crockpot,etc!.I don't want to go out and eat fast food every single day,occasionally maybe,but not like 4 times a week!.Lol so yeah,any good,at least SOMEWHAT healthy recipes for a college student who can't use much to cook with!?Thanks y'all :)Www@FoodAQ@Com

you can actually cook a lot of things in the microwave!. here are a bunch of meals you can make!.


Microwave Chicken

INGREDIENTS:
1 cup ketchup
5 tablespoons curry powder 1 teaspoon cayenne pepper
8 chicken legs

DIRECTIONS:
1!. In a large, round microwave safe casserole dish combine the ketchup, curry powder and cayenne powder and mix together!. Add chicken pieces and turn to coat!. Arrange chicken legs in a fan, with the thin part of the legs in the center of the dish!. Cover and cook in the microwave on high for 12 to 15 minutes or until chicken is cooked through and juices run clear!.


Microwave Potato Chips

INGREDIENTS:
4 medium Yukon Gold potatoes salt to taste

DIRECTIONS:
1!. Scrub the potatoes, then slice them paper thin!. Place a sheet of parchment paper over the bottom of your microwave oven!. Place the potato slices in a single layer on top of the paper!. Season with salt !. Cover the potatoes with a second sheet of parchment paper!.
2!. Cook on high power for 8 minutes, or until potato slices are browned and crisp, testing and adjusting the time as necessary since all microwaves cook differently!. Remove potato chips from the microwave and cool on a rack!. Repeat these steps to cook the remaining potato slices!.


Microwave Tacos

INGREDIENTS:
1 pound ground beef
1 1/2 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1/4 cup water 8 medium taco shells, warmed
2 cups shredded Cheddar
cheese
2 cups shredded lettuce
1/4 cup finely chopped onion
1 medium tomato, chopped
taco sauce

DIRECTIONS:
1!. Crumble the ground beef into a 1 1/2 quart casserole dish!. Cover with glass lid!. Cook in the microwave for 5 minutes on High!. Drain, and stir in chili powder, salt, garlic powder, cayenne pepper and water!. Cover and return to the microwave!. Cook for another 3 to 4 minutes on High!.
2!. Fill each taco shell with about 2 tablespoons of the ground beef, then top with desired amounts of cheese, lettuce, onion, tomato and taco sauce!.


Microwave Chicken Teriyaki

INGREDIENTS:
1/4 cup soy sauce
2 packets ketchup
2 tablespoons garlic powder 3 individual packets white
sugar
1 skinless, boneless chicken
breast half - cut into strips

DIRECTIONS:
1!. Stir together soy sauce, ketchup, garlic powder, and sugar in a bowl!. Toss chicken in sauce to coat, and place onto a microwave safe plate!.
2!. Cover with plastic wrap and cook in the microwave on High for 5 to 8 minutes, until chicken is opaque in the center and no longer pink!.


Microwave Peanut Brittle

INGREDIENTS:
1 1/2 cups dry roasted peanuts
1 cup white sugar
1/2 cup light corn syrup
1 pinch salt (optional) 1 tablespoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

DIRECTIONS:
1!. Grease a baking sheet, and set aside!. In a glass bowl, combine peanuts, sugar, corn syrup, and salt!. Cook in microwave for 6 to 7 minutes on High (700 W); mixture should be bubbly and peanuts browned!. Stir in butter and vanilla; cook 2 to 3 minutes longer!.
2!. Quickly stir in baking soda, just until mixture is foamy!. Pour immediately onto greased baking sheet!. Let cool 15 minutes, or until set!. Break into pieces, and store in an airtight container!.


Curried Microwaved Chicken

INGREDIENTS:
1 apple - peeled, cored, and
chopped
1 onion, chopped
2 tablespoons butter
3 teaspoons curry powder
1 (10!.75 ounce) can
condensed cream of
mushroom soup 1 cup heavy cream
salt and pepper to taste
8 chicken thighs, cut into bite
size pieces
3/4 cup fresh sliced
mushrooms
1 teaspoon paprika

DIRECTIONS:
1!. In a microwave safe dish cook the apple and onion in the curry powder and butter or margarine on high power for 3 minutes!. Stir in the soup, cream and salt and pepper!.
2!. Place the chicken in an 8x12 inch microwave safe baking dish and cover with the curry sauce!. Sprinkle the top with paprika!.
3!. Cover with wax paper and microwave on at full power for 30 minutes!. Test to see if chicken is done and tender!. If not microwave at full power for another 15 to 20 minutes!. Checking every 5 minutes or so!.


Goulash in the Microwave

INGREDIENTS:
1 (8 ounce) package uncooked
elbow macaroni
1 pound ground beef
1 cup diced onion
1 cup sliced celery
1 tablespoon minced garlic
1 (14!.5 ounce) can diced
tomatoes 1 (10 ounce) can tomato sauce
1 tablespoon sugar
1 tablespoon paprika
1 teaspoon dried oregano
1/4 teaspoon caraway seed
1 pinch cayenne pepper, or to
taste
1 teaspoon salt

DIRECTIONS:
1!. Bring a pot of lightly salted water to a boil!. Add the macaroni, and cook until tender, about 8 minutes!. Drain!.
2!. Meanwhile, crumble the ground beef into a 2 quart or larger casserole dish!. Add the onion, celery and garlic!. Cook in the microwave on High for 5 to 6 minutes, or until beef is no longer pink!. Stir once during cooking!. Drain off the grease!.
3!. Stir the tomatoes, tomato sauce and sugar into the beef, and season with paprika, oregano, caraway seed, cayenne pepper and salt!. Cover, and cook in the microwave on power level 8 for about 14 minutes, or until celery is tender and the flavors have blended!.
4!. Remove from the microwave, and mix in the cooked macaroni!. Cook for 2 to 3 more minutes, until heated through!. Serve!.


Microwave Tater-Tot Casserole

INGREDIENTS:
1 (32 ounce) package frozen
potato rounds
1 (10!.75 ounce) can
condensed cream of chicken
soup with herbs
8 ounces shredded Cheddar
cheese 2 tablespoons sour cream
1 (15 ounce) can green beans,
drained
8 slices ham, chopped
salt and pepper to taste
(optional)

DIRECTIONS:
1!. Pour the potato rounds into a 9x13 inch glass baking dish!. Heat in the microwave for about 2 minutes to thaw!. The potato rounds should be cold, but not frozen!.
2!. In a medium bowl, stir together the cream of chicken soup, Cheddar cheese, and sour cream!. Stir in the green beans and ham!. Stir this mixture into the potato rounds until evenly blended!.
3!. Return to the microwave, and cook on high power for 5 minutes, or until heated all of the way through!. If you have a high powered microwave, you may want to check on your casserole every two minutes or so!. Season with salt and pepper, and serve!.


Moist Garlic Chicken

INGREDIENTS:
2 cups water
2 cubes chicken bouillon
1/2 cup butter
1 tablespoon dried Italian
seasoning (optional) 1/2 teaspoon dried dill weed
(optional)
1 teaspoon garlic salt, or to
taste
4 skinless, boneless chicken
breast halves

DIRECTIONS:
1!. Pour the water into a microwave-safe casserole dish, and place in the microwave!. Heat until boiling, about 2 minutes!. Stir in bouillon cubes, butter, italian seasoning, dill, and garlic salt!.
2!. Pierce the chicken breasts with a fork on one side, and place the pierced side down in the casserole dish!. The chicken should be almost covered by the liquid, if not completely covered!.
3!. Cover the dish, and cook in the microwave for 10 minutes, or until chicken is no longer pink, and juices run clear!. If the chicken is not done after the 10 minutes, continue to cook at 1 1/2 minute intervals!.


Microwave Corn on the Cob

INGREDIENTS:
1 ear corn, husked and cleaned

DIRECTIONS:
1!. Wet a paper towel, and wring out!. Wrap the ear of corn in the moist towel, and place on a dinner plate!. Cook in the microwave for 5 minutes!. Carefully remove paper towel, and enjoy!


Microwave Sausage and Clam Soup

INGREDIENTS:
1 1/2 pounds hot Italian
sausage
1/4 cup olive oil
3 cloves garlic, minced
2 onions, chopped
1 green bell pepper, chopped
1 bunch snipped fresh parsley
1 teaspoon dried basil 1 pound fresh mushrooms,
sliced
1 (28 ounce) can whole peeled
tomatoes with juice
1 cup dry white wine
4 (6!.5 ounce) cans minced
clams, drained with juice
reserved
1 teaspoon salt

DIRECTIONS:
1!. In a large microwave-safe dish, microwave sausage 5 minutes on high, until no longer pink!. Remove sausage from dish!. Stir garlic and olive oil into sausage drippings and microwave 1 minute!. Stir in onion, bell pepper, parsley and basil and microwave 4 minutes, until just tender!.
2!. Stir in the mushrooms and cook 2 minutes!. Then stir in the tomatoes, wine and reserved clam juice!. Cover and cook 10 minutes, stirring once!.
3!. Stir in the sausage and cook 5 minutes more!. Let stand 5 minutes before stirring in the clams and salt!. Serve hot!.


Romano Chicken

INGREDIENTS:
4 skinless, boneless chicken
breast halves - pounded to 1/4
inch thickness
1/4 pound Swiss cheese, sliced
1/4 pound ham, sliced thin
2 tablespoons grated
Parmesan cheese 1 1/2 teaspoons paprika
1/2 teaspoon garlic salt
1/2 teaspoon dried tarragon
1/2 teaspoon dried basil leaves
1 tablespoon butter, melted
1/3 cup dry bread crumbs

DIRECTIONS:
1!. Place chicken breasts on a pan!. Place Swiss cheese and ham slices on top and roll up, securing with toothpicks if necessary!. In a small bowl combine the Parmesan cheese, paprika, garlic salt, tarragon, basil and bread crumbs!. Mix together and dip rollups in mixture to coat!.
2!. Drizzle with melted butter and cook on High in microwave for 4 minutes, or until chicken is cooked through and juices run clear!.

Butternut Soup

INGREDIENTS:
2 pounds butternut squash,
cubed
2 onions, chopped
1 tablespoon butter
4 cups vegetable broth 1/2 cup heavy cream
salt and pepper to taste
1 dash ground nutmeg
1 dash ground cloves
1 dash ground cinnamon

DIRECTIONS:
1!. In a large microwave safe dish combine squash, onions and butter!. Cover and microwave on high for 4 minutes!. Peel squash!. Stir in broth and cook on high for another 20 to 25 minutes, or until squash is tender!. Puree squash, onions and broth in a food processor or blender!. Add cream, salt and pepper, and microwave on high for another 3 to 4 minutes, or until heated through!. Flavor with nutmeg, cloves and cinnamon to taste!.Www@FoodAQ@Com

Your floor should have a kitchenette which will have a large fridge/freezer a sink and a stove/oven!.

you'll most likely end up eating a lot of Ramen Noodles, Macaroni and Cheese, and Spaghetti since they're easy and quick to make!. I'd suggest getting a small healthy cookbook and bring it with you, then if you ever feel like making your own food, go to the store, buy fresh ingredients and make it in your kitchenette!.Www@FoodAQ@Com

Good challenge for you!. Here's a great bean salad recipe that requires no cooking, but will need refrigeration!. Beans are a great healthy source of protein and fiber, blah blah, etc!. but the salad tastes great anytime!. I posted the recipe on Suite101!.com

Spaghetti is a really good option!. Add noodles to a microwaveable plastic container, cover with water, cook for three minutes, drain, and add sauce!. Quick and easy!.

A variation is to use shrimp, garlic salt, and butter instead of sauce!. Just heat frozen shrimp until it's warm to the touch, and then add to the drained noodles!.Www@FoodAQ@Com

you can take corn on the cob and after you have it peeled rinse cob then moisten a papertowel and wrap around cob and place in zip lock baggie and cook for a few minutes!.

3!. frozen meals (pot pies, tv dinners, pizza rolls, pizza's, hot pockets or lean cuisine or lean pockets for the healtier version)
4!. veggies (they sell microwaveable bags to steam veggies now)

7!. bacon (they sell microwaveable bacon-precooked just heat it up)

SJ-SC-CA Incredible Chicken Salad

3 cups chicken breast (cooked and cubed)
1 cup pineapple (diced)
1/2 cup celery (diced)
1/2 cup mayonnaise
1/4 cup raisins
1/4 cup walnuts
1/8 cup dried cranberries
2 Tablespoons sweet onion (minced)
2 Tablespoons apple juice

Combine all ingredients in a bowl until well combined and chill!. Serve with a lettuce garnish!.

Here is what I would do: cereal, PB&J sandwiches, other sandwiches, frozen pot pies, frozen burritos with salsa, granola and yogurt, Cup of Noodles, salads, canned soups,lots of fresh fruit! and here are a couple more detailed ideas!.
Nachos-tortilla chips, refried beans, cheese-heat in micro for 30 sec!. Add chopped onion, olives, tomato, sour cream, guacamole, etc!.
Quesadillas-put a flour tortilla on a plate, add cheese generously, add another flour tortilla on top, heat until cheese is melted, serve with favorite toppings (mentioned above)!.
Buy a pre-cooked chicken (for like $5) at the grocery store and that could last like 4 meals if you eat it with a loaf of French Bread and Baked Beans or canned corn!.
Mix a can of tuna with a small can of mixed veggies (the one with potatoes) and add mayo and mustard and chopped lettuce and serve with saltines!. you could substitute tuna for chicken!.
You can buy the pre-cooked cold chicken slices, sold near the sliced meats and add that to your nachos, quesadillas, or just about anything!.
Turn a Baked Potato (cook in micro about 8 minutes) into a meal with toppings like butter, sour cream, chives, bacon bits, etc!.
Make sub-sandwiches and serve with a pickle and chips!.
There are steam bags that you cook veggies in that ROCK! Buy them near the foil!.
Is there a deck that you could add a small BBQ to!?
Are you close enough to a relatives house that you could cook meals on the weekends and store them in the fridge!?

I'd totally sneak a little Crock Pot!

Isn't there a community kitchen!? That's how college's get you!. They charge you tuition and fees, then orientation fee, then you have to buy a meal plan!. Added to that, you have to buy a lock for all your stuff so it doesn't get stolen!. College isn't like it is in the movies!. If you join a fraternity/sorority, you might get a better meal more often, but you also might get more drunk!. You are right, the food in the cafeteria is not healthy!. The restaurants on campus are also much more expensive than restaurants off campus!. Try TV dinners!. The healthy choice or south beach ones!. TV dinners have a lot of salt, though!. You should also keep bagels and maybe some cold cuts, bread, cereal and milk!. Cereal is very healthy and breakfast is important!. If you eat out too much, you will be broke, the food will make you feel run down and you'll get fat!.Www@FoodAQ@Com

While you're still at home, work with your parents to learn how to microwave complete meals!. I've used mine for small roasts and then while the meat rests before cutting, cook the veggies and potatoes!. You've got the fridge for the "planned overs" which can be used for additional dinners or just use the meats for sandwiches!. Maybe your parents microwave oven came with a recipe book!. Review it or one from the library for ideas!. The times will differ depending upon the wattages of the ovens!.

Obviously, you can heat soups and frozen dinners as well as canned items like pasta!. Try to get some salad fixings so you can enjoy those with some meals or as some meals!.

The freezer section has a lot to work with as far as frozen foods but you can also cook bacon, sausage, grits, hamburgers, fries, soups, and so forth in there! There isnt very many good recipes for cooking but you could always look on internet sites and see of you find anything! I have one recipe that I made once when I felt like trying something new and I was low on cash! Get a bar of cream cheese(just a regular size bar, but not a tub), a can of cream of chicken soup, a can of chicken breast and ritz crackers! Put the cream cheese in a bowl and heat it for 45 seconds! Stir it and if it is soft add the soup and chicken breast, if not heat it more! Mix the three ingredients until you have a dreamy white color! Heat that to your liking and use it as a dip with the crackers! It is really good! I have yet to meet one person who doesn't like it! You can get it all 98% fat free and it is just as good then too!Www@FoodAQ@Com
