you will be rolling them,secured with a pick ,then poaching in court boullion!.beurre blanc is fairly simple!.!.
i use juice of 3 lemons and the juice of 2 limes,parsley stems,diced smoked bacon!.shallots and wine!.!.
saute your bacon with shallots,add wine and citrus juices,stems!.let reduce,meanwhile cube 2 pounds of butter!.once your reduction is almost au sec,start whisking in a few cubes of butter at a time,off the heat,untill all your butter is absorbed,pass through a sieve and enjoy!.!.Www@FoodAQ@Com
