Question: Tons of Salmon from Hubby's Lake Michigan trip--Need recipies, please!!?
I searched for them online and found quite a few, but am hoping some members may have something new and different to try!.
We have over 100 lbs that we have portioned and frozen until we can can, smoke or otherwise prepare it!. Thanks in advance!Www@FoodAQ@Com

This is one of my favorites, hope you like it!.

1 1/2 - 2 pound piece of Salmon, skin on
2 lemons
1/2 cup white wine
1 tablespoon butter
1 tsp fresh chopped oregano
Salt, Pepper, Garlic Powder
Foil

Check to make sure the fish is scaled, lightly
run a sharp knife against the scales, remove excess!.
Pat dry salmon!. Season with salt, pepper and garlic powder, sprinkle chopped oregano over fish!.

In a 13 x 9 glass dish, lay two layers of foil in bottom of pan, overlapping sides!. Lay an additional sheet just to fit the bottom of the baking dish!.
Spray with cooking oil!.

Place seasoned salmon in baking dish!. Slice one of the lemons and place slices on the salmon, at least 5 slices!. Pour white wine along sides, don't want to wash the seasoning off the salmon!. Dollop the butter on the salmon and carefully fold up the sides and roll to seal!.

Heat grill to medium high heat for 10 minutes, place salmon on grill rack and cook for approximately 10-12 minutes!. Half way through cook cycle, lower heat to medium!. The salmon will steam on the grill and the white wine, butter, lemon and smoky flavors will produce the perfect entree!.Www@FoodAQ@Com

We BBQ salmon once a week!. Brush salmon filets with olive oil; sprinkle with garlic salt and dried dillweed; grill on both sides 5-8 min, or until flakes!. Serve with this sauce: equal parts mayonnaise & Dijon mustard, with 2 TB!. dried dillweed!.!.!.!.!.

That sauce is also great for a veggie dip !.!.!. and my husband loves salmon salad sandwiches, using leftover BBQ salmon and the sauce as a binder!.!.!.!.!.!.!.Www@FoodAQ@Com
