Yankee pot roast recipe with beef pot roast and vegetables!.

Ingredients:
5 pounds beef roast
1 tablespoon shortening
salt
1/4 cup water
1 medium onion, sliced
1 cup diced rutabaga or turnip
1 cup diced carrots
1 cup diced potatoes
1/4 cup sliced celery with leaves
2 teaspoons dried parsley flakes
salt and pepper to taste

Preparation:
In Dutch oven or heavy kettle, brown meat on all sides in hot shortening!. Sprinkle with salt!. Add water and sliced onion!. Cover and simmer for 3 to 4 hours!. Add remaining ingredients; simmer for 30 minutes more, or until vegetables are done!. Remove meat and thicken liquid with flour and water paste To thicken: Stir a few tablespoons of water into a few tablespoons of flour and stir until smooth!. Stir hot liquid while adding small amounts of flour paste until thickened as desired!. Taste and season Yankee pot roast with salt and pepper to taste!. Yankee pot roast recipe serves 6 people!.

Yankee-est Pot Roast

The meat falls apart and melts in your mouth!.!.!.!.veggies taste sweet as candy with the addition of sweet basil!. A great Sunday dinner :)


SERVES 4

2 cloves garlic, minced
4 lbs boneless beef chuck roast
1/4 cup all-purpose flour
1/4 cup vegetable oil
1 cup tomato juice
6 carrots, peeled and sliced into chunks
2 medium onions, chopped
2 bay leaves
1 teaspoon dried sweet basil leaves
1 teaspoon salt
1/4 teaspoon black pepper
4 medium potatoes, peeled and cut into large chunks

Rub garlic into roast and coat all over with flour!.
In a large dutch oven, brown roast over medium high heat in oil!.
Add tomato juice, carrots, onions, bay leaves, basil, salt and pepper and bring to a boil!.
Reduce heat, cover tightly and simmer for about 3 hours, turning meat occasionally!.
Add potatoes and simmer an additional 30 minutes, or until fork tender!.
Remove bay leaves and serve!.

Pot Roast-- this one is my fav

1 Rump roast (4-5 lbs!.)
1 ts Salt
2 tb Cooking oil
2 cl Garlic, minced
1/2 ts Dried basil
1 tb Dried parsley flakes
1/2 ts Pepper
2 Carrots, sliced
1 Whole Onion, studded with
2 whole cloves
1 cn Tomato puree (15 oz!.)
1/2 c Water or red wine
1/2 ts Beef bouillon granules
Cooked egg noodles


Instructions

Rub roast with salt!. In a dutch oven, brown roast in oil!. Add all remaining ingredients except noodles!. Bring to a boil; reduce heat and simmer, covered, about 2-3 hours or until meat is tender!. Discard onion!. Remove roast; cut into slices!. Serve over noodles with gravy!.

YANKEE POT ROAST

4-6 lbs!. bottom round roast (tied)
1/4 lb!. salt pork or beef fat
2 med!. celery stalks
2 carrots
1 sm!. onion, sliced
1 lb!. can whole tomatoes or 3 fresh tomatoes, cut up
2 tsp!. salt
6 peppercorns or 1 tsp!. ground black pepper
3 c!. water

In a Dutch oven brown roast in salt pork or beef fat!. Put stalk of celery, carrots, onion and tomatoes around meat!. Sprinkle roast with salt and peppercorns!. Add water!. Bring to a boil, cover and simmer over low heat or in a 350 degree oven for 2 1/2 hours!. Lift out roast, keeping warm!. Strain stock, discarding vegetables!.

GRAVY:

1/4 c!. flour
1/3 c!. each cooked peas and cubed carrots
1/2 c!. cooked chopped celery

Flour it on all sides, place in pot that is oiled with veg!. oil and brown on all sides, then add one packet of lipton onion soup and carrots with 4 cups water let it just simmer for hours 4-5 until fork tender!. Let meat rest and add flour and water mixture to gravy to thicken for mashed potatoes!. Cut meat against the grain so it wont fall apart!.Www@FoodAQ@Com
