Answers:
Strudel topping, it adds a nice crunch and a bit of sweetness!.

1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

In a small bowl, mix brown sugar, flour and cinnamon!. Cut in butter until mixture is like coarse crumbs!. Sprinkle over tops of mixture in muffin pan!.Www@FoodAQ@Com

There's a couple different streusel recipes in the recipes below!.!.!. take your pick!.


BLUEBERRY MUFFINS w/ STREUSEL TOPPING

2 3/4 c flour
3/4 c sugar
3/4 c brown sugar
1 t!. baking powder
1 t baking soda
1/2 t salt
2 large eggs, beaten
1 1/2 sticks unsalted butter, melted
3/4 c buttermilk
1 T vanilla extract
1 3/4 t lemon extract
1 3/4 c blueberries

Preheat oven to 375oF!. Combine dry ingredients, in separate bowl combine eggs, butter, buttermilk, and extracts!. Add to dry ingredients and stir (do not beat!) till moist!. Fold in blueberries!. Put batter into 16 lined muffin tins!.

Topping:
3/4 old fashion oats
1/4 cup white sugar
12/4 cup brown sugar
1/2 stick melted butter

Combine the above!. Spoon 1 Tbsp!. topping on each muffin; lightly press into batter!. Bake 20-25 min!. Muffins freeze well!.

Blueberry Streusel Coffee Cake

2 c!. flour
1 c!. sugar
2 tsp!. baking soda
pinch salt
1 egg, beaten
1 c!. milk
1/2 c!. butter, softened
1 c!. fresh or frozen blueberries
1 c!. chopped pecans

Streusel Topping
1/2 c!. sugar
1/3 c!. flour
1/4 c!. cold butter

In bowl combine first four ingredients!. Add egg, milk and butter!. Fold in nuts and berries!. Spread into buttered 9" square pan!. Mix streusel ingredients together until crumbly!. Sprinkle over batter!. Bake 375oF for 40 minutes!.

Overnight Eggnog Streusel Coffee Cake

Fix and forget this coffee cake! Once it's made, it's stored in the fridge until you're ready to bake it the next day!.

Streusel Topping
1/3 cup granulated sugar
1 tablespoon Gold Medal? all-purpose flour
1 tablespoon butter or margarine, softened
1/2 teaspoon ground nutmeg

Coffee Cake
1 cup granulated sugar
1/2 cup butter or margarine, softened
1 cup eggnog
1 container (8 ounces) sour cream
1 teaspoon rum extract
2 eggs
2 1/2 cups Gold Medal? all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Eggnog Glaze
1/2 cup powdered sugar
1 to 2 tablespoons eggnog

1 !. Grease bottom only of rectangular pan, 13x9x2 inches, with shortening!.
2 !. In small bowl, mix all Streusel Topping ingredients with fork until crumbly; set aside!.
3 !. In large bowl, beat 1 cup granulated sugar and 1/2 cup butter with electric mixer on medium speed, or mix with spoon!. Beat in 1 cup eggnog, the sour cream, rum extract and eggs until blended!. Stir in 2 1/2 cups flour, the baking powder, baking soda and salt!. Spread in pan!. Sprinkle Streusel Topping over batter!. Cover and refrigerate at least 8 hours!.
4 !. Heat oven to 350°F!. Uncover pan; bake 35 to 40 minutes or until toothpick inserted in center comes out clean!. Cool 20 minutes!.
5 !. In small bowl, mix all Eggnog Glaze ingredients until smooth and thin enough to drizzle!. Drizzle over coffee cake!. For servings, cut into 5 rows by 3 rows!.
