Cooking Salmon!?!


Question: Cooking Salmon!!?
I always try and make my Salmon like the restaurants do!. I can never get it to be good!. I always buy frozen Salmon, it's the only one I know how to cook!. I would like suggestions on what I can do to make the salmon crispy on the outside and nicely cooked on the inside!. Any ideas!? And whenever I try and put a glaze on my salmon is just slides off as it's cooking and burns!. What can I do!?Www@FoodAQ@Com


Answers:
First off either thaw out your frozen salmon or used fresh!. You have to cook it longer when it is frozen and it gets overcooked

for every inch of thickness you cook fish for 10 minutes!. If it is half inch thick it is only 5 minutes!. take it off !.!.cover it and let it rest!. It is like meat!.!.it will continue to go up in temp for a few minutes!. Salmon should still be a little pink inside and not whitish!. If it is it is overcooked already!

If you want crispy salmon!.!.!.!.heat your pan first!.!.!.until it is smoking!.!.!.then put the salmon in and turn when half way done!.

If you want a glaze!.!.!.I always heat mine and then brush it on as I serve it!.!.!.I don't cook it on it!.!.!.as it will burn !

REMEMBER!.!.!.10 minutes for every inch of thickness!.!.!.thaw out the fish FIRST and put it in a hot pan and don't keep turning it and playing with it!. put it in!.!.!.half way done!.!.turn it!.!.!.take it off cover it and let it rest a few minutes and serve!. IT IS DONE!

I teach people how to cook salmon all the time!.!.!.I did a four day chef event last week and it was the copper river salmon for four days!. I love salmon!.!.but I was sick of by then!

I have people come in all the time and talk to me and thank me for teaching them how to cook seafood!. Most people overcook it!.!.!.!.and it is dry and nasty!. Now that they know how to cook it!.!.they cook it for guests too!Www@FoodAQ@Com

Salmon should be thawed before cooking and cooked to med!. And as for grilling - that's how I like my salmon usually - I throw it on a lightly oiled grill over a medium setting, shut the lid, flip once and cook the other side!. That's it really!.

If you do it in the oven it might turn out more like a baked or broiled salmon!.Www@FoodAQ@Com
