Question: What can I make with pineapple that is simple &healthY!?
Hey there, so I have this pineapple that I have nothing to dow ith it, I've had it for a few days/weeks!. I want to cook with it tonight, what can I do with it!? Thanks!Www@FoodAQ@Com

i think its probably still good!. we have family in hawaii and they always send us pineapple and it usually takes us a while to eat it :) try one of these!.!.

Grilled Pineapple Slices

INGREDIENTS:
1 fresh pineapple - peeled,
cored and cut into rings 1/4 cup canned coconut milk
1/2 cup cinnamon sugar

DIRECTIONS:
1!. Preheat a grill for medium heat!. When the grill is hot, lightly oil the grate!.
2!. Place the coconut milk and cinnamon sugar into separate dishes!. Dip slices of pineapple into coconut milk, then coat in cinnamon sugar!.
3!. Grill slices for 6 minutes on each side!. Remove to plates, and serve!.


Barbequed Pineapple

INGREDIENTS:
1 fresh pineapple
1/4 cup rum
1/4 cup brown sugar
1 tablespoon ground cinnamon 1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves

DIRECTIONS:
1!. Peel the pineapple and, leaving it whole, cut out the center core!. Slice into 8 rings, and place them in a shallow glass dish or resealable plastic bag!. In a small bowl, mix together the rum, brown sugar, cinnamon, ginger, nutmeg, and cloves!. Pour marinade over the pineapple, cover, and refrigerate for 1 hour, or overnight!.
2!. Preheat grill for high heat!. Lightly oil grate!.
3!. Grill pineapple rings 15 minutes, turning once, or until outside is dry and char marked!. Serve with remaining marinade!.


Honeysuckle Pineapple

INGREDIENTS:
4 slices fresh pineapple
1 1/2 tablespoons honey 2 tablespoons cherry brandy
1 teaspoon lemon juice

DIRECTIONS:
1!. To Marinate: Combine honey, brandy and lemon juice in a nonporous glass dish or bowl!. Mix together and add pineapple; coat well with marinade mixture!. Cover dish and marinate in refrigerator for 1 hour!.
2!. Preheat grill to medium heat and lightly oil grate!.
3!. Remove pineapple from dish or bowl, discarding any leftover marinade!. Place pineapple wedges directly on rack or in a basket and grill for about 10 minutes, turning, until pineapple is hot and caramelizedWww@FoodAQ@Com

It is probably rotten by now!. They typically ripen from the inside out similar to pears!.

If is is still good!. Cut it up place pieces on skewers (saok them in water 30 minutes first to prevent burning through) with prawns alternating till the skewer is filled!. Take some of the juice and combine with lime juice, brown sugar, olive oil and dry Coleman's style mustard for a baste!.

BBQ them brushing often with the baste!. About 2 minutes per side until done!.

Serve with Basmati rice and a cucumber salad!.

Cuke Salad:

Peel cukes and salt with kosher salt
Chopped some green onions

Make a dressing of Mayo, white vinegar, white sugar and lots of fresh ground black pepper!.

Drain any water from the cukes!. Mix with dressing and onions!. Chill for 1 hour!.

This meal goes perfect with Watermelon and/or Mango Slices for dessert!. You can grill the mango slices with the baste too!.Www@FoodAQ@Com

Mix it with any other fruits and it'd be a great fruit salad!. Try apples for a crisp crunch, strawberries for a little sweet note, blackberries for a tart surprise, and any other fruits you can think of!Www@FoodAQ@Com

skewer it alternating with large shrimp!. reserve the juice and boil it down with 2 tbsp brown sugar and a heavy shake of garlic!. brush over the skewers while grilling!. serve with rice!.Www@FoodAQ@Com

Pineapple is great grilled on the BBQ!. Goes good with pork too!. You shouldn't need to add anything, maybe brush with a little oil before grilling!.Www@FoodAQ@Com
