The Baked Potato
Recipe courtesy Alton Brown

Show: Good Eats
Episode: This Spud's for You

1 large russet potato (If it looks like Mr!. Potato Head(r), you've got the right one!.)
Canola oil to coat
Kosher salt

Heat oven to 350 degrees and position racks in top and bottom thirds!. Wash potato (or potatoes) thoroughly with a stiff brush and cold running water!. Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking!. Place in a bowl and coat lightly with oil!. Sprinkle with kosher salt and place potato directly on rack in middle of oven!. Place a baking sheet on the lower rack to catch any drippings!.

Bake 1 hour or until skin feels crisp but flesh beneath feels soft!. Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another!. It will pop right open!. But watch out, there will be some steam!.

NOTE: If you're cooking more than 4 potatoes, you'll need to extend the cooking time by up to 15 minutes!.Www@FoodAQ@Com

This is kinda a 2x baked tater

Broccoli stuffed potatoes
4 russet potatoes
2tb butter
1 C chopped broccoli, cooked (steamed or boiled)
2 ts dried parsley, opt!.
S&P (salt & pepper)
1/4 C milk
1/2 C shredded cheese (I use whatever I have on hand)

1) Microwave pierced potatoes on HIGH for about 12 minutes, or until cooked thoroughly!. Slice potato in half!. Scoop out pulp, keeping skins intact!. Mash pulp in a medium bowl!.

2) Add butter, broccoli, parsley, milk, cheese, S&P!. Mix!.

3) Spoon potatoe mixutre into shells, dividing evenly!. Place on a baking sheet!. Bake potatoes until heated through, about 15 min at 350!.Www@FoodAQ@Com

After I clean the potato I rub olive oil on them and salt them with sea salt, than I wrap them in foil, the oil browns and crisps the skin and the foil keeps them from drying out! 425 for 45-to an hour depending on how large the potato is !. also try try this with large white potatoes fantastic!.Www@FoodAQ@Com

I keep it simple!.!.!.!.wash the potato!.!.!.place it on a square of aluminum foil!.!.!.!.cut an x shape in the center of the potato!.!.!.drizzle a little oil on it [whatever kind you prefer and have on hand] place in the oven at 450 for about an hour [depending on the size of the potato!. Delicious and simple!Www@FoodAQ@Com

3 good choices:
1) Microwave full blast a minute at a time, depending on size!.
2) Wrapped in heavy foil, on the rack above the BBQ grill!.
3) Impale on metal kebob skewer, bake in 400F oven!.
Give them a squeeze test with an oven mitt, until they 'give'!.Www@FoodAQ@Com
