I wouldn't use chocolate buttercream under the fondant!. The fondant may get small holes while you're smoothing it and it will show a lot more with chocolate buttercream than it will with white!. You could use chocolate buttercream for a filling between the layers, with a good stiff dam of white buttercream around it to keep it from oozing down when you smooth the fondant!.
Marshmallow fondant tastes good!. You can add butter flavoring to it to make it taste more like buttercream!. It doesn't have that nasty chemical taste that you've heard about with the Wilton fondant!. You can make it ahead of time and store it in the fridge, with a coating of crisco on the ball of fondant, then wrap it in plastic wrap and then put it in a ziplock bag!. If you're going to need a lot of pink, it will be easier to add the coloring to the melted marshmallows and water, before you put in the powdered sugar!.
You should make a practice cake with fondant, just a single tier to get a feel for rolling it out and placing it on a cake and smoothing it!. It's not hard to do, but it wouldn't be fun to try to do it for the first time when you know you have guests coming over soon!. You 'll need something to roll it out on that's big enough!. You can use the wilton cake dividing wheel if you have it, and the circles on there will be a guide for how large you're rolling the fondant!. also, some people roll with cornstarch or powdered sugar, but the most foolproof way to do it is with crisco!.!.!.just smear your mat with a thin coating of crisco before you start rolling the fondant!.
also, it's hard to get the bottom edges perfect so plan on some sort of design element that can hide puckers or wrinkles in case your cake develops a few!. That's why the ribbon around the bottom of the tiers is so popular on fondant cakes!.Www@FoodAQ@Com

Since this is only a first birthday, I'd stick with something really simple for the birthday girl and stay away from fondant entirely!!! Make your daughter a single layer cake, chocolate if you like, and then frost with a buttercream and decorate with colorful sprinkles etc!. She can scoop it with her fingers and have a great time! For guests, make a sheet cake, or cupcakes that you can decorate with marzipan or sugar paste flowers etc!.Www@FoodAQ@Com
