Zuccini recipies?!
I have been given lots of squash this summer and have cooked it in all the usual ways, fried, grilled, zuccini bread, cooked with tomatoes onions and sausage!. We are having steak and baked potatoes tonight and I would like to do something different with squash!. I have searched recipies on the internet but didn't find anything that appealed to me!. Does anyone have any suggestions on some flavorful and easy ways to prepare zuccini squash!?Www@FoodAQ@Com

3 tablespoons coarsely chopped basil
2 tablespoons extra-virgin olive oil, plus more for brushing
1 large garlic clove, minced
Salt and freshly ground pepper
1 1/2 pounds medium shrimp, shelled and deveined
4 medium zucchini, halved lengthwise, then sliced lengthwise 1/4 inch thick
3/4 pound slab bacon, sliced 1/4 inch thick and cut crosswise into 1 1/2-inch squares In a bowl, combine the basil with 2 tablespoons of the olive oil and the garlic!. Season lightly with salt and pepper!. Add the shrimp and turn to coat!.
In a shallow bowl, generously brush the zucchini slices on both sides with olive oil and season with salt and pepper; let stand for 5 minutes to soften!.
In a skillet, cook the bacon over moderate heat until lightly browned, about 2 minutes per side!. Drain!.
Working at the tip of a 12-inch skewer, pierce the very end of a zucchini slice!. Swing the zucchini to the side and skewer a shrimp, then loop the zucchini slice around the shrimp and pierce the zucchini slice to secure it around the shrimp!. Add another shrimp, wrap the rest of the zucchini slice around it and secure it on the skewer!. Add a bacon square!. Repeat the threading, using 2 more zucchini slices, 4 more shrimp and 2 more bacon squares!. Thread the remaining ingredients to make 8 skewers!.
Light a grill or preheat a grill pan!. Oil the grill and grill 4 skewers at a time over high heat for about 2 minutes per side, or just until the shrimp are cooked through and the zucchini are still crunchy!. Serve hot!.

1 cup grated cojack cheese
zucchini, crookneck and patty pan squashes all cubed up and simmered to crisp tender
1 cup heavy cream
1 Tablespoon butter
1 teaspoon each sage, salt, corriender, white pepper
1 Tablespoon sugar, brown or white, makes no diff!.
Grease and butter a 13 x 9 or so baking dish!. put the squash in and top with generous layer of cheese and then the croutons!. Blend other ingredients and pour over the top!. Bake in 350F oven about 30 minutes!.
You can add some diced apple to this for a different taste treat!!Www@FoodAQ@Com

1 tsp!. vanilla
1 1/2 tsp!. cinnamon
2 tsp!. baking powder
1 tsp!. baking soda
Mix all ingredients together!. Pour into two greased & floured loaf pans!. Bake @ 350 degrees for one hour, or until toothpick inserted in center comes out clean!.Www@FoodAQ@Com
