Mmmm, my favourite!. Gouda is good on sandwiches, by itself on cheese platters!. It goes great with grapes!. It really depends on what kind of Gouda you have!? It melts really well too!.Www@FoodAQ@Com

Pork Chops Stuffed with Smoked Gouda and Bacon --
INGREDIENTS
2 ounces smoked Gouda cheese, shredded
4 slices bacon, cooked and crumbled
1/4 cup chopped fresh parsley
1/8 teaspoon ground black pepper
2 (2 1/4 inch thick) center-cut, bone-in pork chops
1 teaspoon olive oil
1/4 teaspoon salt
ground black pepper
DIRECTIONS
Preheat an outdoor grill for medium heat!.
In a small bowl, combine the cheese, bacon, parsley, and 1/8 teaspoon black pepper!.
Lay the chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, going all the way to the bone, but leaving the sides intact!. Stuff cheese mixture into pocket, and close with a wooden toothpick!. Brush meat with oil, and season with salt and more black pepper!.
Lightly oil the grill grate!. Grill over medium heat for 5 to 8 minutes on each side, or until pork is done!. Careful not to overcook!

3 boneless chicken breast halves, cooked and cubed
1 cup hickory flavored barbeque sauce
1 tablespoon honey
1 teaspoon molasses
1/3 cup brown sugar
1/2 bunch fresh cilantro, chopped
1 (12 inch) pre-baked pizza crust
1 cup smoked Gouda cheese, shredded
1 cup thinly sliced red onion
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C)!. In a saucepan over medium high heat, combine chicken, barbeque sauce, honey, molasses, brown sugar and cilantro!. Bring to a boil!.
Spread chicken mixture evenly over pizza crust, and top with cheese and onions!. Bake for 15 to 20 minutes, or until cheese is melted!.

INGREDIENTS
3 pounds red potatoes, peeled and sliced
6 ounces Gouda cheese, shredded, divided
3 tablespoons butter
5 cloves garlic, minced
1 1/2 cups heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C)!. Lightly grease a 9x13 inch baking dish!.
In the prepared dish layer 1/2 of the potatoes, 1/2 of the cheese, then the remaining potatoes!.
Melt the butter in a small skillet over medium heat!. Saute garlic until fragrant and golden brown; pour over potatoes!.
Combine cream, salt and pepper; pour evenly over potatoes and sprinkle with remaining cheese!.
Bake in preheated oven for 75 minutes!. Serve immediately!.

1 onion
6 teaspoons minced garlic
1 pound fresh shrimp, peeled and deveined
12 shells puff pastry, baked
4 tablespoons butter or margarine
3 (8 ounce) packages cream cheese, softened
4 eggs
1/2 cup heavy cream
16 ounces smoked Gouda, grated
2 teaspoons salt
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!.
In a large skillet over medium-low heat, warm oil and saute onions and garlic until onions are translucent; set aside to cool!. When cool, pour off liquid reserving garlic!.
Cut shrimp into 1/2 inch pieces, reserving 12 uncut for garnish!. In a large skillet over medium-low heat, melt butter and add reserved garlic and all shrimp; cook shrimp for 2 to 4 minutes or until done!.
