Answers:
The Warm setting or 275 F!. Cover the meat tightly with foil too to retain moisture!. Don't hold it in there more than 2 hours though!.

Best to not cook it so early!.

If you are still worried about drying it out, slice it, place it IN some gravy and cover it with foil and put on the temp!. I listed!.Www@FoodAQ@Com

200-250 degrees!. Don't leave it in too long or it will dry the meat out!. You can also turn the oven completely off a few minutes before the meat is supposed to be done!. The oven will continue to cook for several minutes!. Don't forget, almost all meats should rest - take them out of the oven, pan, or off the grill and leave them alone - for at least 5 and probably more minutes before you start carving or cutting it!.Www@FoodAQ@Com

You could take the meat out and let it "rest" before warming it up again!. Resting the meat makes it nice and juicy!. What you do is take it out of the oven, wrap it tightly in foil, and let it sit!. If you do that for 40 mins (usually its 20 mins but that's if youre serving right away) and then put if back in the oven and warm it through until you need to serve it (which is 1 hour and 20 mins i think you said!?) That shouldn't dry the meat out!. I don't know the temperature, but I'd say the equivalent to gas mark 3!. I've only heard about resting from TV chefs though, and I haven't tried it so try it as you will lol!. xWww@FoodAQ@Com
