How to properly cook a trout?!

Question: How to properly cook a trout!?
Hi!. This evening I bought a couple of trouts from the grocery store!. Fortunately they are already gutted and beheaded but they still have the scales and skin!. So my questions are as follows:
1) How do I remove the scales and skin!?
2) How do I know when trout is ready to be eaten if I choose to pan-fry it!?

Thank you in advance for your help :-)Www@FoodAQ@Com

Answers:
Everyone says leave the skin on because it comes off easier once cooked!. If you're adverse to skin on the plate you can peel it back before serving!. If not you can serve skin-on and the meat will flake off so you don't have to eat it!.Www@FoodAQ@Com

To answer the first question, it's almost impossible to remove the skin from such a small fish!. As for the scales, take a paring knife and go against the scales, continue this until all the scales have flaked off!. 2) If you adept at using a knife, try to cut the fish in half, down its backbone, it will cook easier!. Fish, especially smaller ones, don't take very long to cook, it's extremely easy to overcook!. You want to put cooking oil in the bottom of your frying pan, heat before putting the fish in!. If your fish is cut in half, place skin side down in the pan!. Watch how the fish changes "color" as it cooks!. When it's transparent, it's done, this will not take more than a few minutes!. There is no need to turn the fish to cook both sides!.Www@FoodAQ@Com

Rub some lemon and pepper over it!.
Leave the skin on!.
Place in pan over low heat with some Olive oil in it (skin side down)!.
Cover and cook for about 7-10 minutes turn it over and cook for about 3 more minutes!.
It will become a little lighter in color and start to break apart that is when it is done!.
Serve over a bed of linguine with mixed with olive oil, butter and basil!.Www@FoodAQ@Com

Leave the skin and scales on!. Cut them open along the backbone from the inside to spread open flat!.

Dip in seasoned flour sprinkle with black pepper!. Fry in oil and butter skin side down first for 4 minutes per side on Medium heat!.

When the fish is opaque it is done!.Www@FoodAQ@Com

if you want to pan fry, leave them whole, bread with a 3 to 1 corn meal to flour mixture seasoned with salt and pepper!. just fry in hot oil in a skillet till fish is firm!.Www@FoodAQ@Com
