Question: I need a simple recipe for Lemon Bars or Lemon squares!?
I had one for lemon bars, that called for lemon pudding but I can not find it!.

Lemon Bars

Crust:
2 cups all-purpose flour
1 cup confectioners' sugar, plus more for dusting
Pinch salt
2 sticks butter, at room temperature, plus more for greasing
Filling:
4 eggs
2 cups granulated sugar
6 tablespoons all-purpose flour
6 tablespoons fresh lemon juice


Preheat oven to 350 degrees F!. Lightly grease a 9 by 13 by 2-inch pan!.
Make the crust by combining the flour, confectioners' sugar, and salt in a large bowl!. Cut in the butter to make a crumbly mixture!. Press the mixture into the prepared pan!. You may need to dip your fingers into a little flour or confectioners' sugar to keep the dough from sticking to your fingers!. Bake for 20 minutes!.

Meanwhile, to make the filling, mix the eggs, granulated sugar, flour, and lemon juice!. Pour this over the baked crust and bake for 25 minutes longer!. Sprinkle with confectioners' sugar, if desired, when the bars are done!.Www@FoodAQ@Com

Simple Lemon Coconut Bars

A!. 1/2 cup confectioner's sugar
10 Tbsp unsalted butter, cut into cubes
Pinch salt
1 & 1/2 cup all purpose flour

B!. 1 cup coconut flakes
1 tsp vanilla
2 Tbsp all purpose flour
3 Tbsp unsalted butter , cut into cubes

6 oz !. Lemon Spread / Curd ( My preference is Meyer Lemon spread from bella cucina artful food !. Any store bought lemon curd work as well )

In food procerssor add all ingredients from A!. Pulse until mixture resembles fine meal!. Press mixture into 8-inch square parchment-lined pan!. Bake in preheated 325 degree oven for about 30 minutes or until light brown!. Cool!.
Spoon lemon spresd evenly over shortbread crust!.
For topping in food processor mix all ingredients from B!. Pulse until mixture is crumbly!. Sprinkle over lemon spread and bake at 300 degree for about 20 min!. Cool and cut into squares!.

For the Meyer lemond curd
4 heaping teaspoons grated organic Meyer lemon peel
1 cup sugar
2/3 cup fresh Meyer lemon juice (about 3 lemons)
1/2 cup melted unsalted butter
4 Organic eggs

Grate the lemon!. Combine with sugar in food processor and blend!.

Add lemon juice and eggs one at a time, blending after each addition!. Drizzle the melted butte in through the spout!.

Pour mixture into double boiler over hot water!. Stir constantly over medium heat until sauce simmers and becomes thick!. Cover and refrigerate till cool!.Www@FoodAQ@Com

For the crust:
1/2 pound unsalted butter, at room temperature
1/2 cup granulated sugar
2 cups flour
1/8 teaspoon kosher salt
For the filling:
6 extra-large eggs at room temperature
3 cups granulated sugar
2 tablespoons grated lemon zest (4 to 6 lemons)
1 cup freshly squeezed lemon juice
1 cup flour
Confectioners' sugar, for dusting


Preheat the oven to 350 degrees F!.
For the crust, cream the butter and sugar until light in the bowl of an electric mixer fitted with the paddle attachment!. Combine the flour and salt and, with the mixer on low, add to the butter until just mixed!. Dump the dough onto a well-floured board and gather into a ball!. Flatten the dough with floured hands and press it into a 9 by 13 by 2-inch baking sheet, building up a 1/2-inch edge on all sides!. Chill!.

Bake the crust for 15 to 20 minutes, until very lightly browned!. Let cool on a wire rack!. Leave the oven on!.
For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and flour!. Pour over the crust and bake for 30 to 35 minutes, until the filling is set!. Let cool to room temperature!.
Cut into triangles and dust with confectioners' sugar!.

1 3/4 cups all purpose flour
1/2 cup confectioners' sugar, plus extra for dusting
1 1/2 sticks unsalted butter, cut into pieces
4 large eggs
1 1/2 cups granulated sugar
2/3 cup freshly squeezed lemon juice
1 tablespoon finely grated lemon zest
1 teaspoon baking powder
Pinch salt

Preheat the oven to 350 degrees F!.
Line a 9 by 13-inch sheet pan with heavy duty aluminum foil, so that the ends of the foil hang over the sides and set aside!.

In a bowl, combine 1 1/2 cups of the flour with 1/2 cup of the powdered sugar!. Cut in the butter until the mixture resembles fine crumbs!. Press in an even layer into the bottom of the pan and bake until pale tan, about 20 minutes!. Reduce the oven temperature to 325 degrees F!.

While the crust is baking, prepare the filling!. (The filling will set up better if the crust is still warm!.) In large bowl, beat the eggs and granulated sugar until pale yellow and frothy!. Add the remaining 1/4 cup of flour, and the remaining ingredients and whisk to combine!. Pour over the warm crust and bake until set, 20 to 25 minutes!.

Cool completely on a wire rack!. Dust with confectioners' sugar before cutting with a thin, sharp knife into squares!.Www@FoodAQ@Com

Lemon Squares
Ingredients:
2 cups flour

Directions
Sift flour and powdered sugar together!. Cut in butter until well blended!. Press mixture over bottom of a 9 by 13 by 2-inch pan!. Bake about 25 minutes at 300° until lightly browned!. Combine remaining ingredients and spread on top of the baked crust!. Bake at 350° for 25 to 30 minutes!. Sprinkle with powdered sugar!.

Bake Sale Lemon Bars

INGREDIENTS:
1 1/2 cups all-purpose flour
2/3 cup confectioners' sugar
3/4 cup butter or margarine,
softened
3 eggs 1 1/2 cups white sugar
3 tablespoons all-purpose flour
1/4 cup lemon juice
1/3 cup confectioners' sugar for
decoration

DIRECTIONS:
1!. Preheat the oven to 375 degrees F (190 degrees C)!. Grease a 9x13 inch baking pan!.
2!. Combine the flour, 2/3 cup confectioners' sugar, and butter!. Pat dough into prepared pan!.
3!. Bake for 20 minutes in the preheated oven, until slightly golden!. While the crust is baking, whisk together eggs, white sugar, flour, and lemon juice until frothy!. Pour this lemon mixture over the hot crust!.
4!. Return to the preheated oven for an additional 20 to 25 minutes, or until light golden brown!. Cool on a wire rack!. Dust the top with confectioners' sugar!. Cut into squares!.

2!. In a medium bowl, stir together 2 cups flour and confectioners' sugar!. Blend in the melted butter!. Press into the bottom of the prepared pan!.
3!. Bake in the preheated oven for 15 minutes, or until golden!. In a large bowl, beat eggs until light!. Combine the sugar, baking powder and 1/4 cup of flour so there will be no flour lumps!. Stir the sugar mixture into the eggs!. Finally, stir in the lemon juice!. Pour over the prepared crust and return to the oven!.
4!. Bake for an additional 30 minutes or until bars are set!. Allow to cool completely before cutting into bars!.Www@FoodAQ@Com
