2 Tbsp vegetable oil, divided
? tsp!. toasted sesame oil
Coarse salt to taste
4 green onions, thinly sliced diagonally (both white and green parts)
4 garlic cloves, minced
5 oz!. ham, thinly sliced and chopped (can use cooked chicken, pork, or shrimp as well)
4 cups cold cooked rice
3 Tbsp!. rice vinegar
1 cup frozen peas, thawed
In a large nonstick skillet, heat 1 Tbsp!. oil, swirling to coat!. Beat eggs, with 2 tsp!. water and ? tsp!. coarse salt!. Cook in skillet, moving cooked eggs aside gently to allow raw eggs to run in their place, about 2 minutes!. Transfer to plate; when cool enough to handle, cut into strips!.
In same skillet, heat remaining Tbsp!. vegetable oil and sesame oil!. Add garlic and scallions, heat and stir until fragrant, about 1 minute!. 1!. In a saucepan bring 4 cups water to a boil!. Add rice and stir!. Reduce heat, cover and simmer for 20 minutes!.
2!. Heat butter in a large skillet over medium-high heat!. Brown chicken in butter and season with salt to taste!. Set chicken aside!.
3!. Transfer cooked rice to the skillet in which the chicken was cooked, stirring to brown!.
4!. In a separate skillet, scramble eggs!.
5!. To the rice add chicken, mushrooms, green onions, eggs and soy sauce to taste!.

5 Slices of Ginger
2 TSP salt
Stuff garlic and ginger in chicken and seal with toothpick!.
Blanch chicken!.
Boil a pot of water and add salt!.
Simmer the chicken for about 20 - 25 minutes or till cooked!.
Retain broth for use on rice, chili sauce and soup!.
Plunge chicken in ice water for about 15 minutes or till chicken is no longer hot!.
Remove from water and drip dry!.
Cut chicken into pieces!.
Rice:
6 1/2 cups of Water
3 cups of Jasmine Rice
8 Pandan Leaves
4 Slices of Ginger
5 Cloves of Garlic
Salt
In a wok, add 2 teaspoon oil, preferably oil from frying chicken skin or the congealed fats you get when you refrigerate your chicken broth!. Otherwise, vegetable oil is fine!.
Saute ginger and garlic till fragrant!.
Add in washed rice and saute till rice is coated well with the oil!.
Add salt to taste!.
Stir to mix well!.
Pour rice with ginger and garlic to your rice cooker!.
Add in broth from chicken you cooked earlier instead of your usual water!.
Add in the pandan leaves!.

I sometimes use the packet of spices that come out of the
Ramen noodles if I don't have any good spices!.
Place a small amount of oil in the skillet add onion and saute,
add in rice, frozen peas or mixed vegetable(optional), chicken and add in scrambled eggs, add in Soy sauce and spices!.
