Why isn't hummus in America as good as elsewhere?!
I've been to Israel/Palestine and the hummus (pron choomoos there) is 1000 times creamier, slightly oily and sooooo smooth!.

Because it is missing the sesame tahini (or does not contain enough of it) that is used when it is freshly made in the middle-east!.
When I make hummus, I use this recipe!.
1 16 oz can of chickpeas (garbanzo beans)
1/4 cup liquid from can of chickpeas
3 or more table spoons of lemon juice (more or less depending on how bitter you prefer)
1 1/2 tablespoons tahini (some times I add more if the hummus is to thick)
At least 2 cloves of crushed garlic
Salt (to taste)
I blend it all up in a food processor until it is smooth and creamy!. Then I put in in a serving dish and make a well in the middle of it and pour olive oil in the middle for serving!.
The olive oil HAS to be extra virgin, and it tastes much better if it is cold pressed (and the greener the better)!. I also will sprinkle the hummus with various spices (tumeric, paprika)!.Www@FoodAQ@Com

I agree that the home made version is so much better than the store bought!. The only difference in home made here and other places in the world is local ingredients!. And I have had some INCREDIBLE hummus made by local chefs here!. The only difference should be the taste of the local ingredients!. Hummus is Hummus the world round LOL!. The only thing that could make it seem to taste better is the location!. I am sure goat poop (see above answer) would taste better on the Grand Canal in Venice LOLWww@FoodAQ@Com
Get some chickpeas/garbanzo beans and make it yourself!. If you go to a restaurant, you may be able to find good hummus!. Don't expect to find anything worthwhile pre-made, at the grocery store!.

You need to find a nice mediterranian restaurant where the cook is from the region and makes his or her own homemade hummus!. I make my own because I don't like the american packaged type either!.Www@FoodAQ@Com
