Keep it simple!. Leave adulterating them with all sorts of cr*p to the professionals!.
BEEFBURGER
Makes 2 quarter pounders
INGREDIENTS
250g of lean minced beef*
Ground pepper to taste
1 tablespoon of sunflower oil
METHOD
Divide the mince into two halves!. Squeeze each half into a ball and then flatten it out into a disc!. Make them firm, so that they don’t fall apart!. Make them chunky, as thin edges will cook too quickly!. Season with the pepper!.
Put the oil into a frying pan on a medium heat!. Fry the burgers for about 5 minutes on each side!.
ADDITIONS & ALTERNATIVES
Add some finely chopped onion!. Add some herbs!.
Use minced lamb, pork or turkey instead of minced beef!. If you use minced lamb, add some finely chopped mint, dried mint or some mint sauce!. If you use minced pork, add some finely chopped apple or some apple sauce!. If you use minced turkey, add some cranberry sauce!.
If you need to make the mince go further, add some grated carrot!.
If the burgers won’t hold together, add some beaten egg!. If you make the mixture too wet, add some breadcrumbs!.
Cook the burgers under a preheated medium grill for about 5 minutes on each side instead of frying!. If the mince is very lean, you might need to coat the burgers with a little oil!.
TIPS
Chilling the burgers in the fridge helps them to hold together whilst cooking!.
You can make the burgers using a burger press!. This is a round mould, which you fill with the mince and then press it into uniformly sized burgers!. However, hand made burgers have more ‘rustic charm’ and there’s no washing up!.
* Use good quality lean and finely ground mince!. The cheaper the mince, the higher the fat content and the more coarsely it is ground!. Use chuck steak, which is reasonably cheap but doesn’t have too much fat, and either get the butcher to grind it, or invest in a meat grinder and do it yourself!.Www@FoodAQ@Com

i use
1lb/500g lean minced beef!.
pinch italian herbs,
slug of worcestershire sauce
a bit of balsamic vinegar
pinch salt and pepper
good squirt of tomato ketchup
Put it in a bowl, squidge it all together and hand mould into 4 patties and then griddle!.
The ketchup helps bind the meat (dont need an egg) and keeps it moist!. I dont put onions in my burgers as they dont cook properly, i just caramelise them in a pan and put them on top!.
Made these last night and they are lovely!.Www@FoodAQ@Com

get mince (for about 4 burgers) and put in a bowl!. Mix with pepper, salt, 1 eggyolk, a few drops of worcestershire sauce!. If you like, you can also add italian herbs!. When mixed properly, shape into burgers!. Make sure they're quite tight, don't let them feel loose or they'll fall apart!.
then coat them in some flour (only a little, tap off the excess) or breadcrumbs!. I never tried breadcrumbs but flour does keep it from sticking to the pan!.
use an anti-stick pan!. Melt some butter!. When you put the burgers in, don't put the heat on too high!. You want to cook them slowly so they cook all the way through!. If they're red on the inside it's dangerous for your health!. After a minute or so they'll not stick to the pan anymore and you can easily turn them without them falling apart!.
alternatively you could grill or griddle them!.Www@FoodAQ@Com

First, be prepared to get your hands messy!.!.!.mushing the meat with your hands is key!. Mix in (in whatever ammounts of your choosing) some worchestershire sauce, garlic, lightly sauteed onions, salt, pepper, one egg, and a few tablespoons of water and whatever else you might like and get messy!.!.!.form the burgers by hand by first making a nice ball and then smushing it between your palms!.!.!.not TOO much, just enough to get a flat round shape!. Put em on a charcoal grill just a couple minutes on each side!.!.!.and you got yourself a killer burger!.Www@FoodAQ@Com
I'm no chef (believe me!) but to make burgers you need beef mince!. Add onion, pepper, whatever else you might like (a touch of garlic perhaps!?)!. Put the burger-fodder into a bowl and add an egg yolk of two, this will make the bits of meat stick together!.
