Answers:
The egg can be a binder in a recipe!. There are flourless recipes that use eggs for that very reason!. Consider doing a flourless peanut butter cookie and add your oatmeal to it! Try a half a cup at first!. Next time, adjust to more or less oatmeal!.

1 cup creamy peanut butter
1 cup white sugar
1 egg

Mix together egg, sugar and peanut butter!. Roll into balls, whatever size you want!.

Place on an ungreased, parchment lined cookie sheet!. Flatten with a fork!.

Bake for 15 minutes at 350°F!.

Cookies are done with they are light brown around the edges!. Let cool on sheet for a couple minutes, then transfer to a wire rack to finish cooling!.Www@FoodAQ@Com

That wouldn't work in the oatmeal cookies but what you could do is take some of the oats and grind it in your blender to a powder!. Just use less of the ground stuff than you would flour because it swells and absorbs all the moisture!. You could also grind up bread or cereal!.

Since you are substituting something you don't know how it will turn out!. Start by adding a little of the ground oats to the mix and make one cookie - bake it - and taste it!. If it's too flat, add a little more ground oats (or whatever) until the cookie stands up like a regular cookie!.

Hope that helps!.Www@FoodAQ@Com

When recipes call for something and you aren't an experienced cook, just do what the recipe calls for!.

Go buy some flour and then make your cookies!.Www@FoodAQ@Com

No an egg can't be used as a substitute for flour!.Www@FoodAQ@Com
