according to Food network ( and I did see this on a program about how foil is made) it makes no difference!. The folks at Reynolds say that the difference is only the way that the roll of aluminum foil comes out!. It makes no difference to the way it cooks!. I had always been told that it needed to be shiny side out!. But, it turns out, that it makes no differenceWww@FoodAQ@Com

Does not matter!. I tend to put the shiny side out; have no idea why!.

One side is shiny and the other is dull because of the way the aluminium foil is made!. The side that touches the roller creates a shiny finish!. The side that has the second layer of foil (2 become 1) results in the dull side!.Www@FoodAQ@Com

If you're just keeping food fresh, it doesn't matter!.
If you're cooking, shiny side in cooks the food at a (slightly) higher temperature, shiny side out cooks it at whatever temperature you set the oven to!.Www@FoodAQ@Com

Shiny side into the food is supposed to reflect the most heat that way!.
