INGREDIENTS
1 (18!.25 ounce) package yellow cake mix
1 (11 ounce) can mandarin oranges, juice reserved
4 eggs
1/4 cup vegetable oil
1 (16 ounce) package frozen whipped topping, thawed
1 (15 ounce) can crushed pineapple, drained
1 (3!.5 ounce) package instant vanilla pudding mix



DIRECTIONS
Mix together cake mix, canned oranges with juice, eggs, and oil!. Pour batter into three greased and floured 8 inch round pans!. Layers will be thin!.
Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until cake tests done!. Cool layers on wire racks!.
Mix together whipped topping, drained pineapple, and instant pudding mix!. Fill and frost the cooled cake!. Refrigerate until ready to eat!.

1 (12 ounce) container frozen whipped topping, thawed

Prepare cake batter according to package directions!. Beat in oranges until blended!. Pour into two greased and floured 9-in!. round baking pans!. Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted near the center comes out clean!. Cool for 10 minutes before removing from pans to wire racks to cool completely!.
Combine pineapple and dry pudding mix; fold in whipped topping!. Spread between layers and over top and sides of cake!. Store in the refrigerator!.

INGREDIENTS
1/2 cup butter
1 1/2 cups brown sugar
1 (20 ounce) can sliced pineapple
10 maraschino cherries
1 (18!.25 ounce) package white cake mix



DIRECTIONS
Melt the butter over medium high heat in the iron skillet!. Remove from the heat and sprinkle the brown sugar evenly to cover the butter!. Next, arrange pineapple rings around the bottom of the pan, one layer deep!. Place a maraschino cherry into the center of each pineapple ring!. Prepare the cake mix as directed by the manufacturer, substitute some of the pineapple juice for some of the liquid in the directions!. Pour the batter over the pineapple layer!.
Bake as directed by the cake mix directions!. Cool for 10 minutes, then carefully turn out onto a plate!. Do not let the cake cool too much or it will be stuck to the pan!.

INGREDIENTS
1 (16 ounce) package angel food cake mix
1 (20 ounce) can crushed pineapple with juice
1 (12 ounce) container frozen whipped topping, thawed



DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Spray a 9x13 inch pan with vegetable oil spray!.
In a large bowl, combine cake mix and pineapple (with juice)!. Mix until well blended!.
Pour batter into prepared 9x13 inch pan!. Bake at 350 degrees F (175 degrees C) for 25 minutes or until golden brown!. Let cool!.

Pineapple upsdie down cake

Serves 8

Butter for greasing
2 x 15ml tbsp sugar
6 slices pineapple from a 425g can, plus
3 x 15ml tbsp of the juice
11 glacé cherries, approx!. 75g total weight
100g flour
1 tsp baking powder
? tsp bicarbonate of soda
100g soft butter
100g caster sugar
2 eggs

1 Preheat the oven to 200C/Gas 6!. Butter a tarte Tatin tin (24cm wide at the top and 20cm diameter at the bottom) or use a 23cm cake tin (neither loosebottomed nor springform)!.

2 Sprinkle 2 tbsp sugar onto the buttered base, and then arrange the pineapple slices to make a circular pattern as in the picture!.

3 Fill each pineapple ring with a glacé cherry, and then dot one in each of the spaces in between!.

4 Put the flour, baking powder, bicarbonate of soda, butter, caster sugar and eggs into a food processor and run the motor until the batter is smooth!. Then pour in the 3 tbsp pineapple juice to thin it a little!.

5 Pour this mixture carefully over the cherry-studded pineapple rings; it will only just cover it, so spread it out gently!.

6 Bake for 30 minutes, then ease a spatula around the edge of the tin, place a plate on top and, with one deft – ha! – move, turn it upside-down!.Www@FoodAQ@Com

* 8 ounces cream cheese, softened
* 1/2 cup vegetable oil, such as canola, corn oil, or safflower oil
* 3 large eggs
* 1 cake mix (18!.5 ounces) butter cake mix with pudding in the mix

PREPARATION:

Beat in drained pineapple and lemon juice!. Spoon into a Bundt cake pan!. Bake for 45 to 55 minutes, or until a toothpick inserted in center comes out clean!.

The following is entirely made from processed ingredients, so if youre not into that, look elsewhere!.
This is how I make my pineapple cake:
Bake two layers of lemon or yellow cake (mix) Freeze one for later!. Wash out the cake pans!. Put one layer back into the cake pan then pierce the cooked cake 200 times with a chopstick!.
Pour over one prepared package of Pineapple Jello
Allow to set-up in refrigerator
Drain one can of crushed pineapple and spread over the top of the cake
Top with cool whip, or other such whipped topping!.

Carrot and Pineapple Cake

For the cake:
2 cups granulated sugar
1 1/3 cups vegetable oil
3 extra-large eggs, room temp
1 tsp pure vanilla extract
2? cups plus 1 Tbsp!. all-purpose flour, divided
2 tsp ground cinnamon
2 tsp baking soda
1? tsp kosher salt
1 cup raisins
1 cup chopped walnuts
1 pound carrots, grated
? cup diced fresh pineapple

For the frosting:
3/4 pound cream cheese, at room temperature
? pound unsalted butter, at room temperature
1 tsp pure vanilla extract
1 pound confectioners' sugar, sifted

For the decoration:
? cup diced fresh pineapple

Preheat the oven to 350oF!. Butter 2 (8-inch) round cake pans!. Line with parchment paper, then butter and flour the pans!.

For the cake:
Beat the sugar, oil, and eggs together in the bowl of an electric mixer fitted with the paddle attachment until light yellow!. Add the vanilla!. In another bowl, sift together 2 1/2 cups flour, the cinnamon, baking soda, and salt!.

Add the dry ingredients to the wet ingredients!. Toss the raisins and walnuts with 1 tablespoon flour!. Fold in the carrots and pineapple!. Add to the batter and mix well!.

Divide the batter equally between the 2 pans!. Bake for 55 to 60 minutes, or until a toothpick comes out clean!. Allow the cakes to cool completely in the pans set over a wire rack!.

For the frosting:
Mix the cream cheese, butter and vanilla in the bowl of an electric mixer fitted with the paddle attachment until just combined!. Add the sugar and mix until smooth!.

Place 1 layer, flat-side up, on a flat plate or cake pedestal!. With a knife or offset spatula, spread the top with frosting!. Place the second layer on top, rounded side up, and spread the frosting evenly on the top and sides of the cake!. Decorate with diced pineapple!.

1 large deep dish pie crust
1 flat pastry for top crust
