BAKING QUESTION about toasted coconut?? How to keep from burning when it's on top of something??!


Question: BAKING QUESTION about toasted coconut!?!? How to keep from burning when it's on top of something!?!?
I came up with a recipe of my own!. I'm using a muffin pan to bake small, individual-style cakes!.!.!.!.!.they will be topped with toasted coconut!.

Here's the thing!.!.!.!.!.I want the coconut to stick to the cake tops, but I don't want it to burn!.

Should I toast the coconut first!?!? And if so, should I put it on top before baking or during baking!?!? I can't do it after, because I don't think it will stick!.

If I DON'T toast the coconut first, would there be an optimal time to put it on top of the cakes as they bake, so it toasts in the oven!?!?

I AM THINKING that I will put already-toasted coconut on top of the cakes about midway through baking and cover with foil!.!.!.!.hoping that it doesn't burn!.

I would use the pretoasted coconut, but don't put it on the cakes in the oven halfway!.
When the cakes are done, brush the tops with a little (little) melted butter, and sprinkle on the coconut!. It should stick pretty easily!. There you have it!.Www@FoodAQ@Com

I just called my best friend on this one as she cooks with coconut alot!. If you get it moist it will not burn!. Not to wet my just a little, she says it helps to soften it a bit to!.Www@FoodAQ@Com
