State Fair Cake?!


Question: State Fair Cake!?
I'm entering the cake competition at the state fair!. I've come up with a butter cake that is delicious!. But I keep having two problems!. The cake falls as soon as I take it out of the oven!. And, no matter how much I grease and flour, the bottom of the middle sticks and the cake falls apart!. Anybody know what I'm doing wrong and how to fix it!? Thanks for any help!.

ingredients: butter, flour, granulated sugar, baking powder, vanilla

I've been baking it in a 10 inch cast iron skillet(I like the shape it gives the cake, which is one layer) at 350 degrees for 30 minutes!.Www@FoodAQ@Com


Answers:
There could be several reasons for your troubles, but to me is sounds like you may not be baking long enough!.

While a cake is baking, there are gasses that form tiny bubbles in the batter!. If it's cooked through, these bubbles are frozen, which gives the cake the spongy texture!.

If the cake is cooled before thoroughly baked, these bubbles collapse, causing the cake to go flat!. There you have a "fallen" cake!. This will also cause it to stick to the bottom of the pan in the middle!.Www@FoodAQ@Com

you will need to look at other recipes!.!.
I agree about the eggs
BUT
350 OK ,,10" cast iron = 45Min
you will still use a clean toothpick to test!.!.
You might also try dusting the greased pan with flour to help avoid sticking!.!.

Shouldn't you add eggs to bind it!?

I'm guessing that would be part of the problem since eggs were not mentioned in your list of ingredients!.Www@FoodAQ@Com
