Question: What are some EASY meals that I can freeze now and cook when the baby comes!.!.!.!.!?

I'm from new orleans, and we live on the easy-to-freeze food!.

Anything with rice is great (jambalaya, red beans and rice)
Gumbo (you can buy the stock/roux in advance, just add meat)!.
Lasagna is always a great one!.
Sloppy Joe mixings (defrost and put on a bun)!.
Chilli (but I make a "Mexican" version with taco seasoning and few bell peppers, tomatoes, serve with tortilla chips and sour cream)Www@FoodAQ@Com

Just about any casserole can be frozen, then baked!. One of our favs is a Tater Tot Casserole!.

1 lb hamburger
1 can cream of chicken soup
frozen tater tots
salt and pepper to taste
1 cup shredded cheddar cheese

press the hamburger into the bottom of your baking pan (you can use those disposable aluminum ones)!. Sprinkle with salt and pepper, then layer the tater tots on top, lining them up so that the entire top of the meat is covered!. Spread the soup on top of the tots!. You can either sprinkle the cheese on now and freeze or wait until you bake it and sprinkle the cheese on at the end(that is what I do)!. Put the whole thing, pan and all, in a zip lock bag and freeze!.

Thaw it out and bake at 375 for about 45 minutes!. If you want to bake it frozen, it takes about an hour 15 to an hour and a half to bake!.Www@FoodAQ@Com

A lot of Once a Month Cooking and Investment Cooking sites require you to prepare a boatload of recipes you've never tried before!. The downside: you end up with multiple batches of something you might not like!. Look at these sites to get some ideas and adapt them to suit you and hubby!. I do a little investment cooking and the things I make the most often are meatballs, (for meatball sandwiches or spaghetti) soups, enchiladas, chili, refried beans (for nachos or bean burritos) and pasta dishes!. You absolutely must label and date everything because you will forget what's what!. The first link is the best, in my opinion!. Good luck!
