CUCUMBERS: What can i make with them now that i have many in the garden-besides pickling them?!
I love cucumber salad that i make with chopped cucumbers, oregano, olive oil and vinegar!.!.!.!.but im kind of stumped for what else i can make with them!. thnx for any and all suggestions!.Www@FoodAQ@Com

CUCUMBER PARTY SANDWICHES
1 (8 oz!.) pkg!. softened cream cheese
1 stick butter, softened
1 pkg!. Good Seasons mild Italian dressing (dry)
1 (8 oz!.) loaf party rye bread
2 cucumbers, unpeeled & thinly sliced
Dill weed for garnish
Combine cream cheese, butter and dressing mix!. Refrigerate for several hours or overnight!. Spread on each slice of bread, top with cucumber slice and sprinkle with dill!. Serve immediately!.
Makes about 3 dozen!.
NOTE: Especially good in summer when cucumbers are best

2 c!. peeled and coarsely chopped cucumbers
1 c!. chicken broth
1 c!. light cream
1/4 c!. chives, chopped
1/4 c!. celery leaves, chopped
3 sprigs parsley

2 tbsp!. flour
Salt and pepper to taste
Buzz all ingredients in blender until smooth!. Serve either hot or cold!. If served hot, garnish with a small amount of dill weed!. If served cold, garnish with finely chopped cucumber and a bit of grated lemon rindWww@FoodAQ@Com

You can make sushi if you have the other ingrediants, You just need rice, viniger, sugar, dried seweed, and whatever else you want to put in it!. You mix 2 cups of rice, 2 Tablespoons of viniger and 1 and 1/2 tablespoons of sugar together!. You smear the rice mixture on the seweed and lay the cucumbers on top with whatever else you want (carrots, sweet potatoe, clam-all of these are optional) Roll it up and enjoy!Www@FoodAQ@Com

Put them in boiling water which has a few drops of wine vinegar added; boil for 2 min!. drain them!. put them in a colander under cold water!. simmer them for 12 minutes in a small casserole with 2 tablespoons of olive oil, tablespoon of vinegar, pinch of salt, pinch of paprika; at the last minute add 2 spoonfuls of Dijon mustard; mix well and turn out into a dish!. Just mix it up a bit!. Some are creamy styles and other more of a vinigrette!.

Cucumber sandwiches are nice!.!.!. Some people just have cucumbers on bread with a little mayo!. I prefer more of a veggie sandwich, with cucumbers, lettuce, and tomato with mayo!.

You could always pickle them so you'll have cucumbers over the winter!. You could also give them out to people who perhaps don't have a garden or don't have any family!. My family often makes a salad that includes cucumbers, tomatoes, onions (optional), salt, and some oil!. Delicious!!!Www@FoodAQ@Com

1st u coat a pan with olive oil
then coat ur sliced cucmbers in oliv oil
then bake until a lil browned and crispy!. on bout 400 degrees
enjoy!
