Question: I have leftover rice from dinner (about 4 cups)!. Does anyone have a recipe for rice pudding using cooked rice!?
Answers:
Cook Time: 25 minutes
Ingredients:
2 c!. cooked rice
1/2 c!. sugar
2 eggs, slightly beaten
2 c!. milk
1/2 tsp!. vanilla
1/4 c!. raisins
1/2 tsp!. powdered cinnamon
Preparation:
Place rice in bowl, add all ingredients, stir to mix!. Pour into greased baking dish or pan!. Bake about 25 minutes in a 350 degree oven!.Www@FoodAQ@Com

1/2 cup raisins
2 cups scalded milk
2 eggs, separated
1/4 teaspoon salt
1/2 cup sugar
1 1/4 cups cooked rice
1/8 teaspoon cinnamon or nutmeg
Add the raisins to the hot milk and let stand for approx!. 15 minutes!. Add the salt and sugar to the egg yolks and beat until thick!. Combine the hot milk, raisins, rice and cinnamon and cook in a double boiler until it has thickened!. Beat the egg whites until they are stiff and then add to the mixure and chill!. Try serving with sliced fruit!.

(4-serving size) JELL-O Vanilla Flavor Cook & Serve Pudding & Pie Filling 1 cup instant white rice, uncooked 1/4 cup raisins 1/4 tsp!. ground cinnamon 1/8 tsp!. ground nutmeg BEAT egg with wire whisk in large saucepan!. Gradually add milk, beating until well blended!. Add dry pudding mix; stir 2 minutes or until well blended!. Stir in rice and raisins!.

BRING to full rolling boil on medium heat, stirring constantly!. Remove from heat!. Cool 5 minutes, stirring occasionally!. Pour evenly into 10 dessert dishes or 1-1/2-quart serving bowl!.

SPRINKLE evenly with cinnamon and nutmeg!. Serve warm!. Or, cover and refrigerate until ready to serve!.Www@FoodAQ@Com

you could try bringing your rice,1/2cup raisins and 2 cups milk and 2 cups 35% cream to the boil!.!.while this is warming whisk 6 egg yolks well with sugar,vanilla,pinch of nutmeg!.
add a little bit of the boiled milk to the eggs stirring hard,then add all the egg mixture to your rice milk mixture,stirring well over med-low heat!.cook for 5 minutes and enjoy!.this should work!.make sure you have enough sugar!.taste great warm or cold!.!.Www@FoodAQ@Com

Another idea besides making the rice pudding is to make fried rice with your leftover rice!. Leftover rice are perfect for fried rice!. :)Www@FoodAQ@Com
