What should I make with fennel?!
My boyfriend scored some organic fennel and we do not know what to do with it!. He found a recipie for Fennel Soup, but it requires some difficult ingredients like pranod and desiree potatoes!. Pranod is imposible to get in our area!. any suggestion for a more local palate!?Www@FoodAQ@Com

Fresh Green Beans, Fennel, and Feta Cheese
INGREDIENTS:
1 pound fresh green beans,
trimmed
1 fennel bulb, cut into thin
slices
1/4 cup extra-virgin olive oil
2 tablespoons chopped fresh
basil leaves
salt and pepper to taste
1/4 cup crumbled feta cheese
DIRECTIONS:
1!. Fill a saucepan half full with water and bring to a boil!. Add the green beans and fennel slices; cook until just beginning to become tender, about 4 minutes!. Pour into a colander to drain and run under cold water to stop the cooking process!.
2!. Return the empty pan to the stove and set heat to medium!. Pour in the olive oil and let it heat for a minute!. Return the green beans and fennel to the pan!. Season with basil, salt, and pepper; cook and stir until coated and warm!. Transfer to a serving dish and toss with feta cheese!.
Baked Fennel with Parmesan
INGREDIENTS:
2 fennel bulbs
1 tablespoon butter
3/4 cup half-and-half cream 3/4 cup creme fraiche
1/4 cup grated Parmesan
cheese
DIRECTIONS:
1!. Preheat the oven to 400 degrees F (200 degrees C)!. Cut the base off of the fennel bulbs, and cut a cone shape into the base to remove the core!. You can see the core because it is whiter than the surrounding green!. This is optional, but helps the fennel cook faster!. Slice the fennel vertically (upright) into 1/4 inch thick slices!.
2!. Melt the butter in a large skillet over medium heat!. Add the fennel, and fry for about 5 minutes!. Stir in the half-and-half and creme fraiche until well blended!. Transfer to a shallow baking dish!. Sprinkle Parmesan cheese over the top!.
3!. Bake for 30 minutes in the preheated oven, or until the top is golden brown and the fennel is tender enough to pierce with a fork!.

4 fennel bulbs, trimmed and
quartered
1/4 cup olive oil
1/2 cup chicken broth 1 tablespoon honey
1 cup white wine
1 teaspoon mustard seed
salt and pepper to taste
DIRECTIONS:
1!. Place the fennel quarters in large deep skillet with the centers facing up!. Drizzle with olive oil then pour in the chicken broth and honey!. Season with mustard seed, salt and pepper!. Cover and cook over low heat for 45 minutes, turning occasionally!.Www@FoodAQ@Com

Simply slice the fennel bulb thinly; into a bowl + lemon juice + toss well;
