Jerky is meat that has been cut into strips trimmed of fat, marinated in a spicy, salty or sweet liquid, and then dried with low heat (usually under 70°C/160°F) or occasionally salted and sun-dried!. Jerky is dried meat!! that is the long and short of it!.

It can be marinated in salts and spices or vinegars or whatever before being dried!.

The marinades can have liquid smoke in them, but one usually does not smoke the meats for jerky!.

Meats suitable for jerky are any beef, lamb, venison, antelope, buffalo, bison, etc that would be a bit on the tough side to begin with!.

I have never done any fowl jerky!.

Jerky can be pounded in mortar and pestle to powder and blended in lots of things including soups and stews!. It can be added to trail mix if hacked or chopped into small bites!.Www@FoodAQ@Com

Meat that is heat or sun dried, then rubbed down with salt to preserve it!. It can last for many months but is hard as cowhide to chew!.

Modern jerky like you get in the supermarket uses the same methods but achieves a more tender outcome because of modern methods!.Www@FoodAQ@Com
