Question: Need the recipe for cinnamon candy (possibly rock candy)!?
ok so heres the deal my hubby is wantin some old fashioned homemade cinnamon candy and i have no idea how to make it!. I'm guessing it's kinda like rock candy but i'm not sure!. All i know about it is you bake it then bust it up like peanut brittle!. If anyone has any idea of how to make this please let me know!.!.!.!.

Ingredients:
3 3/4 cups white sugar
1 1/2 cup light corn syrup
1 cup water
2 teaspoons cinnamon oil
1 teaspoon red food coloring


Directions:

Roll the edges of two 16 inch square pieces of heavy duty aluminum foil!. Sprinkle the foil very generously with confectioners' sugar!. In a large heavy saucepan combine the sugar, corn syrup and water!. Heat over medium high heat, stirring constantly until sugar dissolves!. Stop stirring and heat until a candy thermometer reads 300 to 310 degrees F (149 to 154 degrees C)!.

Remove from heat and stir in the cinnamon oil and food coloring!. Pour over the prepared foil; let cool and harden!. Crack into pieces and store in an airtight container!. Makes 2 pounds!.

Microwave Rock Candy

1 c!. white sugar
1/2 c!. light corn syrup
1/2 tsp!. cinnamon flavoring
red food coloring
powdered sugar

First get a large baking sheet with sides and cover with a generous helping of powdered sugar!. Set aside!.

Next, mix sugar and corn syrup in a large mixing bowl!.Cover tightly with plastic wrap!. Microwave on high for 3 minutes!.
(Take out and stir - make sure you grab the bowl with potholders as it will be VERY hot, and when you uncover the bowl - HOT steam will be coming out so make sure your face isn't real close!.)

After you have stirred it, recover - microwave again for 3 minutes and 30 seconds!.

Remove - take off cover - it will be boiling - when the boiling has stopped - add flavoring and food coloring - stir quickly - and immediately pour onto your sugared baking sheet!. ( When you're pouring, try to pour it all evenly on the baking sheet!.)

Let it cool really well - and then break into pieces!. ( I use my meat mallet :P)

HOMEMADE CINNAMON CANDY


Ingredients
2 1/2 cups sugar
1 cup light corn syrup
1/2 cup water
red food coloring
1/2 teaspoon cinnamon oil


Method
1) Combine sugar, syrup, water, and enough coloring to reach desired color!.

2) Boil to hard crack stage, 295 degrees F!. Immediately add cinnamon oil!.

3) Pour into medium sized cookie sheet with sides!.

4) As it begins to cool, score with a knife into squares!. Break into pieces!.

After rolling, the piece should be four inches wide!. Spread with frosting made of white of one egg and two-thirds cup confectioners’ sugar, beaten together until stiff enough to spread!.
