I made the cream and it's ready, so I have to figure out a way to deal with the caramel!. It's gone really well, so I don't want to mess up!.Www@FoodAQ@Com

if you are going to do that you have to get your sugar to whats called the hard crack stage,4 parts sugar to 1 part water,simmer untill amber brown,to not overcook!!!be carefull you will be dealing with over 400 degree temps!.!.pour this onto your creme move around until all is covered and refridgerate!.!.let harden!.!.i,v never done this method but if you are careful it may just work!.!.

Yes, you probably can!. Maybe do little piles of sugar on a silpat mat (would worry about parchment burning) then stick under broiler!. When melted into a puddle, pull out and let harden!. Use a knife to pry them up adn pop onto your creme brulee!.
