Question: Red Cabbage Salad,Northwoods inn,Clearman"s!?
In Southern California, It was a small Restaurant Chain!.Their Dressing is/was a secret !. I learned in later years that the dressing was poured over the cabbage hot, Vinegar,sugar,and maybe oil and I don't know about caraway seeds !. Sound familiar to anyone!? The salad was cold and crisp!.Www@FoodAQ@Com

I am a former chef and for that to happen it would have to be done quite quickly and not allowed to sit, red cabbage does stay crisper than white when you add any dressing, I would like caraway seed even some fresh chopped dill in mine, I make a killer red cabbage braise with apples, onions, brown sugar, red wine vinegar and caraway seeds in the winter, tastes like candy, but to keep it crisp and crunchy I would imagine they tossed it like a ceasar salad, when ordered or in small batches!.
