A meal that I like to make that is supper easy and very tasty (even my 2 year old will eat it) is Chicken Spedini!. Generally, this isn't the easiest dish to make, but I have played around some and made my own recipe!.

4 boneless, skinless chicken breasts (I use the kind you buy frozen that come with rib meat attached!.!.!.thawed of course!)
1/2 c Italian style bread crumbs
1/2 c Grated Parmesan Cheese(dried is better than fresh grated for this recipe)
1/4 tsp Oregano
1/4 tsp Sweet Basil
1/4 tsp Thyme
1/4 tsp Italian Spices
1/8 tsp Pepper (or less to taste)
1/8 tsp Crushed Red Peppers (or less to taste)
1/3 c Extra Virgin Olive Oil
1/3 c Lemon Juice

If the chicken breasts are thick, pound them to about a 1/3inch thickness between two sheets of waxed paper (I use my fist!.!.!.basically, you just want the breasts to be fairly even in thickness)!. Combine all the dry ingredients in a mixing bowl, and combine the Olive Oil & Lemon juice in another bowl!. Dip the chicken in the Olive Oil & Lemon juice (make sure there is plenty on it), then coat the chicken in the dry mixture (like a breading)!. I then try to "roll" the chicken breast (tuck under the longer sides) and place it on a cookie sheet with deep sides (or in a baking dish)!. I pour the remaining olive oil and lemon juice over the chicken, and sprinkle the remaining dry mixture over them as well!. Bake for 45 minutes at 375 degrees (check around 35 minutes to make sure they are not over cooking)!. Slice and serve!Www@FoodAQ@Com

Cook boneless skinless chicken breasts in a skillet with a little oil about 4 minutes per side on medium heat!. Add one chopped onion, cook briefly and add 1 cup of chicken broth!. Cook about 3 minutes then add one jar of spaghetti sauce!. Turn heat to low, cover and let simmer until chicken is done, approximately 20 minutes!. Meanwhile, cook some spaghetti following directions on the box!. Drain the pasta and serve the chicken and sauce over the pasta!. Bagged salad and some Italian bread complete the meal!.Www@FoodAQ@Com

My family LOVES these chicken sandwiches!.!.!.

Marinate boneless skinless chicken breast in Hawiian marinade, then grill them!.

When they are almost done, put either fresh or canned pineapple slices on the grill for a few minutes!.

To put the sandwiches together you will toast a kaiser roll and spread bbq sauce on it!. Add your chicken, grilled and grilled piineaplle, then top with mozzarella cheese, leaf lettuce and tomato!.

They are yummy!!!!Www@FoodAQ@Com
