Chicken francaise with penne - I know it sounds complicated, just hear me out!.!.!.once you make it a few times, you can get it done in 20-25 minutes or so and you can use the leftover chicken & penne to make it again & again throughout the week!.!.!.Plus you can really impress your friends!.!.!.
1!. buy those perdue thin sliced chicken breasts (this way all the hard work is already done for you)
2!. make sure you have:
flour
lemon juice (doesn't have to come from fresh lemons, the stuff in the plastic bottle is fine)
white wine (either chardonnay or pinot is fine)
vegetable oil
eggs
milk
butter or margarine
salt & pepper
box of penne pasta
3!. start boiling the water for the pasta in a large pot (add a tablespoon or two of salt to the water and 1/4 cup of vegetable oil to keep the pasta from sticking)
4!. put vegetable oil in a frying pan and start heating it up - med-high is fine (you don't want your oil too hot or it will burn the outside of the chicken without cooking the inside)
5!. in a bowl, mix 2 eggs, a spash of milk and some salt & pepper to taste - maybe not too much, you could always add more later!.!.!.
6!. Once the vegetable oil is hot, take chicken pieces out of package, coat with flour on both sides, then dip the flour coated chicken in the bowl with the egg/mike mixture - then put directly into frying pan!.
7!. Cook chicken until golden brown on one side and then turn chicken and cook on other side until golden brown!. Remember, this is thin sliced chicken, so it won't take long, only 3-4 minutes on each side!.
8!. After chicken is all cooked, put aside on a plate & cook your pasta!. Once you become a little more at ease in the kitchen, you'll be dumping in that box of pasta and flipping the chicken at the same time!
9!. Once pasta is cooked - about 10-12 minutes (but you can always take out a piece and taste it to see how it's cooking until you get a better handle on cooking pasta) - drain pasta
10!. Now here's the part where you can figure what you want to eat and what you want to save!. If you're just cooking for yourself, put the large pot back on the stove (medium heat)and add to the pot one piece of the chicken (or two if you can eat alot) and some of the pasta!.
11!. Add a few tablespoons of butter, about 1/8 cup of the lemon juice and 1/8 cup of wine!.
12!. Cook for 1-2 minutes until the pasta and the chicken are well coated with the sauce!.
13!. Put on a plate & enjoy!
Here's the good part, if you are making the whole batch, just up the quantites of wine, butter and lemon juice so you have enough liquid to coat the chicken and for the pasta to absorb some of the flavor!. If you're just making one serving, you can put away the pasta and chicken as is!. Don't cook it with the lemon juice, wine and butter unless you are going to eat it!. It will not keep very well this way!. It will be too mushy when you try to eat it as a leftover!.
When you want to cook it as a leftover, all you have to to is take a small frying pan and add the butter, lemon juice and wine, add a piece of the chicken, some pasta, warm it up for 2-3 minutes and it's ready to eat!Www@FoodAQ@Com
