Sausages are easy to cook, just remember 3 golden rules:

1!. Cook them slowly

2!. Never prick a good sausage

3!. Cut the links cleanly with a sharp knife

Sausages can be baked, barbecued, fried, grilled or poached!.
Whatever method you use they should be cooked right through, but still juicy!. Cook them slowly to ensure that the skins do not burst!. This is vital because the skin helps to retain moisture, once it bursts it cannot do this!.

It can be difficult to turn sausages without piercing the skins!. A pair of spring loaded kitchen tongs will make it easy to turn and reduce the risk of piercing them!.Www@FoodAQ@Com

I like to steam Italian sausage on top of cabbage!. Would work with just about any large sausage!. Never burns on the outside, cabaage may have to come out before the sausage is done!.

For any method of cooking sausage have 1 tester you can cut into to check for doneness!. If you find it's burnt on the outside and not quite done in the middle you can toss it in the microwave to finish (30-60 seconds)!.

For breakfast links or patties turn down your heat and cook slower!.Www@FoodAQ@Com

I have the same issues - add ribs to the list as well!.

-Put about 1 inch of water over the sausage & cover
-bring to a boil
-lower to a simmer
- cook til liquid's gone
- continue cooking in pan w/cover off until browned
- or - throw them on the grill / in the oven (broiler) / whatever you want to do if you want them browned!.Www@FoodAQ@Com

I am not sure what type of sausage you are talking about!. Some of the answers think it is big links like Brats, but I think you mean the small links!. I don't fry sausage or bacon anymore!. I hate the mess on my stove!. I take a large cookie sheet with sides and put a cooling rack on it!. I put the meat (sausage patties or links or bacon) on the rack and put it in a 400* oven!. I add about 1/2 inch of water under the rack and the grease goes down instead of all over your oven!. I bake it for about 30 minutes or until it is done!. You can tell by the color!. Bacon stays flat !! I got bacon at a really good price last week and I cooked 12 packages!. After it was done, I rinsed it with hot water and dried it off and put it back into the oven to dry it really well, then I put it in zip lock bags and froze it!. Now, I can re-heat in the microwave and always have it and not have my house smell like bacon every time we eat it!. You can cook two pans at once and it is really easier than standing over a hot fry pan and turning meat!Www@FoodAQ@Com
