Answers:
ITALIAN SPAGHETTI SQUASH PARMESAN

1 2 lb spaghetti squash -- (2 to 3)
1/3 cup Water
1 Small onion -- chopped
1 tablespoon Low calorie margerine
1/2 pound Yellow squash -- sliced
1/2 cup Carrrot -- shredded
1/2 cup Bell pepper -- chopped
2 Med!. tomatoes -- seeded&diced
3 tablespoons Fresh parsley -- chopped
1/8 teaspoon Salt
1 1/2 teaspoons Fresh basil -- chopped
1/8 teaspoon Pepper
1 tablespoon Grated Parmesan cheese

Pierce spaghetti squash at random, using a fork; place in a 12x8x2" baking
dish!.
Microwave at HIGH for 10 min!. Cut in half lengthwise, re- move and
discard
seeds!. Place spaghetti squash, cut side up, in baking dish add water!.
Cover
with heavy-duty plastic wrap and vent!. Microwave at HIGH for 10 - 12 min
or
until tender, turning dish after 5 min!. Drain spaghetti squash and cool!.
Using
a fork, remove spaghetti-like strands to yield 3 c; set aside in a large
bowl!.
Discard shells!. (Reserve any re- mainng spaghetti-like strands for use in
othe
recipes
Combine onion and margerine in baking dish; cover and microwave at HIGH
for 1-2
min or until tender!. Add yellow squash, carrot and bell pepper; cover and
microwave at HIGH for 3 min or until crisp-tender!.
Add yellow squash mixtue to reserved spaghetti squash!. Add tomatoes,
parsley,
minced basil, salt and pepper; toss gently to mix!. Return mix- ture to
dish, and
sprinkle with cheese!. Garnish with a sprig of fresh basil, if desired!.
Serve
immediately!. (about 52 calories per 2/3c serving)

Baked Spaghetti Squash TNT


Ingredients
1 medium spaghetti squash (2-1/4 lb!.)

12 oz!. bulk Italian sausage

1-1/2 cups sliced fresh mushrooms

1 medium green or red sweet pepper, chopped

1/3 cup finely chopped onion

3 cloves garlic, minced

1 4-1/4-oz!. can chopped pitted ripe olives (optional)

1/2 tsp!. dried Italian seasoning, crushed

1-1/2 cups purchased red pasta sauce (or your favorite recipe homeade)

1-1/2 cups shredded Monterey Jack, mozzarella, or Italian blend cheese

1/4 cup snipped fresh Italian parsley



Halve squash crosswise; remove seeds!. Place cut sides down in 2-quart rectangular baking dish!. Add 1/4 cup water!. Cover with vented plastic wrap!. Microcook on high power 13 to 15 minutes or until squash is tender when pierced with fork; rearrange once for even baking!. In a large skillet cook sausage, mushrooms, sweet pepper, onion, and garlic over medium heat until sausage is no longer pink; stir to break up sausage!. Drain off fat!.



Preheat oven to 350 degrees F!. Scrape pulp from squash (about 3 cups)!. Wipe out baking dish; coat with nonstick cooking spray!. Spread half the squash in dish!. Add half the sausage mixture and half the olives!. Sprinkle with seasoning and 1/8 teaspoon black pepper!. Top with half the sauce and half the cheese!. Top with remaining squash, sausage, olives, and sauce!. Bake for 30 minutes!. Sprinkle with remaining cheese!. Bake for 5 minutes or until cheese is melted!. Let stand 10 minutes!. Sprinkle with parsley!. Makes 6 servings!.


Spaghetti Squash Salad

3 Ib!. spaghetti squash
1/2 Ib!. fresh mushrooms - sliced
1/4 cup parsley - chopped
3 Tbsp!. butter or margarine
1/4 cup olive oil
1/4 cup grated parmesan cheese
2 Tbsp!. margarine
2 tsp!. fresh garlic - minced

2 tsp freshly chopped rosemary leaves or 1 tsp dried
Freshly ground pepper

Pierce squash in several places with a knife to allow evaporation while cooking!. Place whole squash in microwave oven and cook on high for 15 minutes, turning once or twice!. Remove from oven and let stand 10 minutes!. Place parsley, olive oil, margarine, and garlic in a small bowl!. Cook on high for 1 minute!. Set aside!. Saute mushrooms in 3 tablespoons butter or margarine and add rosemary at the end!. Cut squash in half lengthwise and remove seeds and membrane!. With fork, gently pull squash flesh away from side of outer skin!. Combine squash with mushrooms!. Pour butter mixture over vegetables and sprinkle with cheese, salt, and pepper!. You can bake it or steam it or microwave it!. The hardest part is cutting it in half (or in pieces)!. Scrape out the seeds!. You can cover it with tinfoil and put it in the oven, say 350 for an hour!. Or if it will fit you can put it in a soup pot with a lid, put a little bit of water in the bottom and boil it for maybe 45 minutes!. Or you can microwave it (wrapped in waxed paper or saran wrap) for 20 min!.

Stick a fork into the flesh and if it sinks all the way to the shell it's done, otherwise just cook it a little more!. It's hard to overcook it so don't worry about that!.

Now let it cool for a minute or two!. Then scrape out the flesh with a fork!. It comes off in little shreds!. You serve these shreds just like spaghetti, with tomato sauce and parmesan cheese, or you can make a casserole or whatever!. It has a very mild 'squashy' flavor!. Cut in half, microwave for a total of 20 minutes!. You can put butter in the last few minutes of cooking!. Sprinkle with pepper!.

Or cut in half put in a pan with sides in pre heated oven for 1/2 hour with spagetti sauce poured in to it!. You know it's cooked when you take a fork and run the tines over the squash and it pulls away and turns stringy like spagetti!!

cut it in half!. put it in a dish with a little water and put it in the microwave for about 25 minutes, depending on the size, until it's fork tender (like a potato)
when its done scoop out the seeds in the middle and "rake" up the noodle-like stuff around the sides!. this is what you eat!.

Despite what everyone else says, it really does do best in the microwave (I know, not exactly "gourmet" sounding, but its true)!.

Just cut in half, stick in the box on med-high for about 8-10 minutes covered in some plastic!. Then pull apart the strands with a fork!. Should still have a bit of a crisp to them, but delicious!.
Serve up with some butter, salt, pepper, and parmesan cheese too taste!. No fancy stuff required to make a great meal out of this!.Www@FoodAQ@Com

Spaghetti Squash
Ingredients::
Spaghetti squash
Spices, olive oil, and bacon as desired

Cut the squash in half and carefully remove the seeds!. You might want to use a kitchen scissors to cut around the edge because you don't want to dig into the squash itself (which is easy to do)!.
Turn upside down in a baking pan!. Bake at 375-degrees until the inside is somewhat soft (about 45 minutes for this sized squash)!.
Let cool until the squash can be handled and then carefully remove the inside of the squash!. They will come out in threads that look and act much like cooked spaghetti (thus, the name)!. There will be a much larger volume of strands than you think!
Cook several pieces of bacon very crisp and chop into bacon bits!.
In a skillet, heat some olive oil and/or butter!. Add the spaghetti squash threads!. Toss with spices as desired and the bacon bits!. Heat through!.

Varaition Use a tomato-based sauce (like pasta or spaghetti sauce) instead of the bacon and olive oil/butter suggested above!.
Notes:
Treat the spaghetti squash threads just like spaghetti!. Use them in most any recipe where you have spaghetti!. Covered with spaghetti sauce and cheese makes a nice diversion!.
Mix the threads with a cheese mixture and heat through for a different presentation!.
If you want to get creative with presentation, serve in the empty shells!.
Idea:
Toss threads with chopped tomatoes, sliced fresh basil, minced garlic, salt & cubed fresh mozzarella cheese!. Serve cold or heat briefly in microwave until cheese begins to melt!.

And, so forth; use your imagination!.!.!.




How To Cook Spaghetti Squash

Spaghetti Squash can be stored at room temperature for about a month!. After cutting, wrap in plastic wrap and refrigerate up to 2 days!. Spaghetti squash also freezes well!. Pack cooked squash into freezer bags, seal, label and freeze!. Partially thaw before re-using, then steam until tender but still firm, about 5 minutes!.


Bake It -- Pierce the whole shell several times with a large fork or skewer and place in baking dish!. Cook squash in preheated 375°F oven approximately 1 hour or until flesh is tender!.
Boil It -- Heat a pot of water large enough to hold the whole squash!. When the water is boiling, drop in the squash and cook for 20 to 30 minutes, depending on its size!. When a fork goes easily into the flesh, the squash is done!.
Microwave It -- Cut squash in half lengthwise; remove seeds!. Place squash cut sides up in a microwave dish with 1/4 cup water!. Cover with plastic wrap and cook on high for 10 to 12 minutes, depending on size of squash!. Add more cooking time if necessary!. Let stand covered, for 5 minutes!. With fork "comb" out the strands!.
Slow Cooker or Crock-Pot - Choose a smaller spaghetti squash (unless you have an extra large slow cooker) so that it will fit!. Add 2 cups of water to slow cooker!. Pierce the whole shell several times with a large fork or skewer, add to Crock Pot, cover and cook on low for 8 to 9 hours!.

Once the squash is cooked, let it cool for 10 to 20 minutes so it will be easier to handle, before cutting in half (if it wasn't already) and removing the seeds!. Pull a fork lengthwise through the flesh to separate it into long strands!. (See photos!.)
