3 TB cocoa plus 1 tbs!. butter, margarine, or shortening= 1 square of baking chocolate

3 TB cocoa, 4 1/2 TB sugar, and 2 2/3 TB butter, margarine, or shortening= 4 oz of sweet baking chocolate

For every 1 ounce of unsweetened baking chocolate called for in a recipe, substitute 3 tablespoons cocoa powder plus 1 tablespoon butter, shortening or vegetable oil!.

For melted baking chocolate, use melted butter, shortening or vegetable oil!.

For 1 ounce (1 square) unsweetened chocolate, substitute 3 tablespoons cocoa powder plus 1 tablespoon shortening or butter!.
For 1 ounce (1 square) semisweet chocolate, substitute 1 square unsweetened chocolate plus 1 tablespoon sugar, or substitute 3 tablespoons semisweet chocolate chips!.

Do not substitute milk chocolate for recipes that call for semi-sweet or bittersweet chocolate!. Milk chocolate is more heat sensitive than other chocolates, and it has a much different flavor and sweetness!.

It will work just fine!. You will need to add a fat!. Look on the box, it should have a handy conversion!.
Something like for 1 square of baking chocolate, use 3 tablespoons cocoa powder and 1 tablespoon butter!.

It will turn out just fine, since thats all that the baking chocolate is, unsweetened chocolate!. The powdered kind has had all of the cocoa butter removed, leaving just the cocoa solids!.Www@FoodAQ@Com

No you cannot substitute powdered cocoa for the blocks of chocolate!. It is probably calling for you to melt the chocolate in a bowl over boiling water and if so then the powdered cocoa won't give the same consistency!. Hope I could Help!Www@FoodAQ@Com

Yes, you might be able to!. But you would have to find out how many cups it is per square in the chocolate, which would be hard since I have a box right in front of me!. All it says is that it is 14 grams and 1 oz!.

I think someone made a mistake here - it should be:

1 square bakers chocolate = three tablespoons cocoa and one tablespoon shortening!.

So you would need:

NINE tablespoons cocoa and THREE tablespoons of shortening!.Www@FoodAQ@Com

On the side of the Hershey's Cocoa tin, it says, "3 level tablespoons of cocoa + 1 tablespoon of shortening = 1 square (1oz) of unsweetened baking chocolate"
