What can i do to chicken wings so that they'll go well with fried rice?!
the bf and i are making fried rice and we're trying to eat kind of healthy!. we have about 8 or 9 drummets to cook with the rice!. i'd like something with A LOT of flavor to possibly smother the chicken with (i'm leaning toward sweet & sour sauce)!. can anyone think of any good suggestions for the chicken!? i think i want to bake it, but i'll fry it for the right recipe!. and i'm not looking for a sweet & sour recipe, i already have one!. just something good (and on the light side if possible) to match the fried rice!. any suggestions would be welcome!.Www@FoodAQ@Com

Marinade recipe adapted from Judiaann Woo
1/2 cup brown sugar, packed
1/2 cup soy sauce
1/4 cup water
3 tbsp mirin (rice wine)
2 shallots, peeled and minced
pinch red pepper flakes
1/2 small green apple, peeled and finely grated (or use an Asian pear if you can find one)
3 tbsp minced garlic
1 tbsp dark sesame oil
pinch black pepper
1 green onion, thinly sliced (optional)
1-2 pounds chicken wings
The above recipe will make ~ 2C!. Use 1 to marinate wings in a plastic bag for 4 hours or overnight!. To the other, add 1/2C chicken broth, simmer and reduce to 1/2 - 2/3 C for use as a sauce!. Grill the wings over moderate heat, pop 'em on the fried rice and spoon on some sauce!.Www@FoodAQ@Com

Soak them in a Kikkoman Marinade!. I use it all the time and I cook a lot of Oriental food!. It works well!. If you can't find it at you're local Grocery store you can order it online @ http://www!.kikkoman!.com/index!.shtml They have a wonderful site to look up Recipes and you can order directly from them!. Well, I wouldn't bread them!. I would stay clear from baking them!. Try to pan fry OR deep fry until cooked and then pan fry with the rice!. You can dip each of you out 4 drummets and some rice!. Sounds nice to me!. LolWww@FoodAQ@Com

Give them a quick bath in a sauce made from soy sauce, hoisin sauce, honey, garlic, red pepper, and any dried herbs you like!. Soak for as long as you can, 3 hours would be really good, but if you can go longer, that'll be even better!.
Put them to soak in a plastic bag with all the air squeezed out!. Then when you're ready to cook, I like to grill them till just done, but you can bake them or pan-fry them in just a little bit of oil, so not really unhealthy!.

Chinese-Style Wings
30 wings (flappers only)
2 tablespoons cooking oil
1 tablespoon FINELY minced ginger
1 tablespoon FINELY minced garlic
1/4 cup minced green onions
1/8 teaspoon red pepper flakes
2/3 cup rice wine
1 cup soy sauce
3 tablespoons brown sugar *
*Mix this with SOY SAUCE until partially dissolved!.
Heat wok and add oil!. When oil is hot, add garlic ,ginger, green onions and red pepper flakes!. Fry for about 15-20 seconds, stirring and being careful to not burn garlic!.
Next, add wings and cook for few minutes until light brown!. also it is important during this part of cooking cycle to make sure wings get coated with garlic, ginger, red pepper flakes and green onion!.
Next, pour rice wine over wings and stir them for 1-2 minutes before adding the brown sugar/soy sauce mixture!. Stir for about 1 minute to ensure wings are evenly coated!.
Turn down fire a little, cover wok and simmer wings for about 20 minutes, removing lid and stirring every three minutes or so!. It is VERY IMPORTANT to make sure that when you stir, the wings on the bottom of the wok are stirred to the top so that the sauce flavor will be evenly distributed!.
At the end of the 20 minutes simmering cycle , remove lid from wok and turn up heat a little bit!. Stir wings every minute or so!. Cook wings until they have glazed appearance (about 5 to 10 minutes)!.
Serve with white rice!.
NOTE: Any extra sauce leftover in wok can be spooned over rice!. You could also probably make whole chicken wings (use about 12-13 and lengthen simmering time maybe 10-15 minutes to allow flavors to penetrate meaty part of wing)!.
Szechuan Orange Chicken Wings
This is a great recipe for those who love Szechuan orange chicken!. It
is easier than the stir fried version done with the chicken meat!. You
can serve it with rice for a main course, but I like to serve it as
finger food as an appetizer!.
2 pounds chicken wings
Marinade
3 cloves garlic, minced
4 teaspoons minced ginger root
4 teaspoons minced ginger root
3 green onions, minced
1/3 cup Hoisin sauce
1 tablespoon hot Chinese chili paste
2 tablespoons frozen orange juice concentrate
2 tablespoons grated orange peel
3 tablespoons soy sauce
3 tablespoons honey
1/2 teaspoon oriental sesame oil
Cut off the wings tips and reserve for making stock!. Cut the
remaining wing in half!.
Combine all the ingredients for the marinade!. Add the wings to the
marinade, place in a clean plastic bag, tie securely and marinate for
a few hours in the refrigerator, turning the bag occasionally to make
sure the wings are well coated!.
Preheat the oven to 400 degrees F!. Line a baking dish with parchment
paper!. Arrange the wings in a single layer!. Bake for 20 minutes,
brush with the marinade, turn wings, brush other side and bake 15
minutes longer!.
