Question: How Do I Keep the Egg Yolks!?
I'm making an angel food cake!. It uses only egg whites so I'm going to have a lot of yolks left!. I've heard you can freeze them but have never heard how!. Do you beat them first!? How long will they last!? How do you thaw them out!? Thanks!.Www@FoodAQ@Com


Answers:
Spray an ice cube tray with nostick spray!.
Drop a yolk in each one!.
Freeze!.
Pop out of tray (hence the spray!. the proteins in the egg would just stick to the tray)!.
Put in a zip top bag and freeze for up to a year!.
Thaw in the fridge overnight!.
Makes great custards and such after thawed!.Www@FoodAQ@Com

Maja-- I freeze them in ice cube trays
if you are making a large angel food cake you are talking about 12 to 13 yolks!. I beat them with a fork until just mixed well, add
1 tea spoon sugar and a pinch of salt while
beating, spray the ice cube tray with pam
pour an equal amount in each cube and freeze!. The sugar and salt help to stabilize
the yolks and is not enough to effect the use in another recipe!. After freezing store in a zip lock bag up to 3 months!.

then sponge cake with berries, and cream on top!.
