Question: What can I do with a cake mix and chocolate icing and some coffee!? and make it not be cake!?
it's my brother's birthday and he'll be home from work in about an hour!. I sub-consciously went to the gas station and grabbed a spice cake mix and chocolate icing and then realized that since mom's birthday was also this week, we already have two cakes and we don't need another one!. And besides I don't think he wants a cake he probably wants something funner!. any ideas!? I wanted to put some coffee in with it but that's not mandatory!.Www@FoodAQ@Com

You can make coffee icing to use in Cake Balls

Coffee Frosting
1 teaspoon instant coffee granules
1/4 cup milk
1/4 cup unsweetened cocoa powder
6 tablespoons butter
1 1/2 teaspoons vanilla extract
5 cups confectioners' sugar

DIRECTIONS:
Mix together; instant coffee or leftover coffee, milk, cocoa powder, butter or margarine, vanilla extract, and confectioners' sugar until of spreading consistency!. Makes more than enough to frost a 13x9 inch sheet cake!.

Frosting 2
Ingredients:

3 tablespoons LAND O LAKES? Butter, softened
3 cups powdered sugar
2 tablespoons coffee-flavored liqueur** ((try hersheys!?!?))
3 to 4 tablespoons brewed coffee, cooled

combine all frosting ingredients except 3 to 4 tablespoons coffee in medium mixer bowl!. Beat at low speed, scraping bowl often and gradually adding enough coffee for desired spreading consistency!.

Cake Balls

"This recipe is very versatile and heavily addictive!. You can mix and match cake and icing flavors as well as the chocolate coatings!. If you want to go the extra mile, cake balls can be rolled in nuts, sprinkles, coconut, etc!. or double dipped in white and dark chocolates!. Chocolate confectioners' coating is also called Almond Bark in some stores!."

1 (18!.25 ounce) package chocolate cake mix
1 (16 ounce) container prepared chocolate frosting
1 (3 ounce) bar chocolate flavored confectioners coating

Prepare the cake mix according to package directions using any of the recommended pan sizes!. When cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended!.
Melt chocolate coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth!.
Use a melon baller or small scoop to form balls of the chocolate cake mixture!. Dip the balls in chocolate using a toothpick or fork to hold them!. Place on waxed paper to set!.

Coffee Cookies

!.!. 2 cups brown sugar
!.!. 1 cup shortening
!.!. 2 eggs
!.!. 1 cup cold coffee
!.!. 1 tsp!. baking soda
!.!. 2 tsp!. baking powder
!.!. 4 cups flour
!.!. 1 tsp!. vanilla
Directions

Mix all ingredients!. Place on sprayed baking sheet, 2" apart!. Bake at 350 degrees F for 10-12 minutes!. Let cool and frost!.

Frosting (or use what you have): Heat to a boil 1/4 cup milk and 1 Tbs!.!. margarine or butter!. Remove from heat and stir in 1 lb!. powdered sugar, 2 Tbs!.!. peanut butter and 1 tsp!. vanilla!.

If frosting starts to set up while you are frosting the cookies, add just a touch of milk until you get the consistency again!. The frosting is what really makes these cookies!. And don't forget to have one with that next cup of coffee or big glass of milk!. Betcha can't eat just one!Www@FoodAQ@Com
