take 2 tbs flour and 2 tbs butter in a sauce pan and over medium heat- stirr, "mush" together until butter melts and you have a thick paste!. Slowly- 1/8 of a cup at a time add the stock , and stir or whisk to incorporate the liquid!. Turn heat to low and continue adding stock until you have a consistancy that you want!. Add salt, pepper, seasonings, and you have a great gravy!Www@FoodAQ@Com
Melt 3 tbsp butter in medium saucepan!. While waiting, combine 3 tbsp flour with one cup milk/beef stock!. Mix thoroughly!.
With a whisk, slowly add mixture to melted butter!. Add 2 more cups milk/beef stock!. Stir continually until boiling!. Reduce heat, and stir until thickened (about 3-5 minutes)!.
Rule of thumb (at least for me): 3 tbsp butter & flour per 3 cups of liquid!.Www@FoodAQ@Com
