Freezing new potatoes,?!


Question: Freezing new potatoes,!?
i boiled them then when cold i freeze them!.when i defross they go all soggy

Answers:
The freezing process breaks down the fibers in the potato!. Nothing wrong with that!. You just have to know how to deal with it!. Slice them up before you freeze them, and then bake the **** out of them (seasoned, and coated with olive oil) after you take them out of the freezer!. About 400-450 degF for about 20-30 minutes!.

The trick is that eventually the moisture will evaporate, and the potato will crisp up!.

Or you could just use them for mashers!.

The starch breaks down in them!. I think maybe if you pre-cook them under a broiler or bake to get rid of some of the moisture you could freeze them!. I would freeze them individually (wedges or whatever) on cookie sheets then transfer to ZipLoc freezer bags!. I have seen frozen mashed potatoes at the grocery store too!.!.Www@FoodAQ@Com

As far as I am concerned, the only eatables frozen potatoes are mashed!. If you want the true taste of new pots, cook and eat with a bit of butter and chives!.
But keep trying!. Never know you might find a new trick
