1!. OVEN-BBQ SALMON

1/4 cup orange juice
2 teaspoons fresh lemon juice
4 skinless, boneless salmon fillets, 5oz each and 1 1/4'' thick
1 teaspoon brown sugar
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1/8 teaspoon ground cumin
1/2 teaspoon canola oil

Mix together orange juice and lemon juice!. Place salmon in a Ziploc bag and pour the juices over the salmon!. Turn salmon to coat well on all sides!. Marinate in the refrigerator for 30 minutes!.Combine all spices in a small bowl!.Preheat oven to 400°F!. Lightly oil a shallow baking dish with canola oil!. Remove salmon from Ziploc bag, discarding marinade!.Pat dry with paper towels!. Rub spice mix all over salmon!. Transfer fish to baking dish!.
Bake until done, 10-12 minutes!.
Serves 4!.

2!. BBQ WHOLE SALMON STUFFED

1/2 c!. BBQ sauce
2 boxes M!.J!.B!. wild rice, cooked
1 lb!. scallops, uncooked
1 can water chestnuts, drained & rinsed
1 (6 to 10 lb!.) salmon, cleaned

Brush inside cavity with BBQ sauce!. Mix together: rice, scallops and water chestnuts and stuff inside cavity!. Wrap tightly in foil and keep sealed!. BBQ 45 minutes on one side, turn (still sealed in foil) and BBQ 45 minutes on second side!.

3!. ALASKA BBQ SALMON

1 salmon steak per person
Season to taste

BASTING:

Mix: 1/4 c!. butter 2 tbsp!. lemon juice (fresh lemon when available)
Melt basting mix on low heat!.

Place salmon steaks on hot BBQ grill or place in broiler pan under broiler!. Baste every two minutes with brown sugar, lemon and butter mixture!. Cook at least 6 minutes per side depending on thickness!.

INGREDIENTS (Nutrition)
1 cup brown sugar
1/2 cup honey
1 dash liquid smoke flavoring
1/2 cup apple cider vinegar
1 (4 pound) whole salmon fillet

DIRECTIONS
Preheat grill for high heat!.
In a small bowl, mix together brown sugar, honey, liquid smoke, and vinegar!.
Brush one side of the salmon with the basting sauce!. Place the salmon on the grill, basted side down!. After about 7 minutes, generously baste the top, and turn over!. Cook for about 8 more minutes, then brush on more basting sauce, turn, and cook for 2 minutes!. This is the BEST!. My picky kids will even eat it!. People who say they hate fish will eat it!. It's simple and awesome!.

Lay out a large sheet of alum!. foil!. Spray with PAM or lightly rub a little oil to keep it from sticking!.

Lay the salmon on the foil!. (after you've rinsed and patted it dry with paper towel)!. Squeeze a lemon over the whole thing!.

Next sprinkle on your favorite spices!. I have a sea food spice mix that I bought at costco, but in the past I've used basil, parsley, garlic powder, pepper, rosemary!.!.!. what ever you like!.

Next (and this is the best part) thinly slice pepper jack cheese and place it on top of the salmon!. Cover the whole top!. Then wrap up the salmon in the foil!. Not too tight, because you don't want to cheese to stick to the top!.!. I leave it loose on top!.

Place on grill and cook until foil packets puff up a little!.!.!. which is usually about 15 to 20 min!. depending on how hot your grill is!.

Peal open foil and eat!. it's so good, and we like to pour the sauce from the lemon, spices and cheese that is in the foil over some cooked white rice!.
